What did ya eat today - Monday?
Hi Gang! I hope you had a fabulous weekend! It sure warmed up here quite nicely, was brisk/chilly this weekend! I love the fall as you know so bring it on! I worked over the weekend as most of you know, had to float to the psych floor.. thats always an experience. At least when I go there I realize my issues aren't ALL that bad Hope that doesn't come off offensive to anyone personally or with someone you know, I mean it all in good fun. Otherwise, great weekend at work! I have my 9 month follow up appointment on Wednesday, why do I always get nervous to go to those? Does anyone else? It should go just fine, no bloodwork this time. Anyway, enough rambling and on to the eats portion!
B: On the way home from work - PB Granola Atkins Protein Bar. 3 baby pickles and 3 cubes of cheese also after I got home. (why can't I just stop at the bar? someone tell me.. argh! but overall happy with how I did).
S: Having a SF, decaff, homeade hot latte using light vanilla soy milk and SF Cinnamon Dolce Syrup.
Honestly this is it so far.. I haven't been up much today, slept 5-6 hours. I went to the store after work and got some stuff to make the husband lasagna as I know he loves pasta.. I was gonna make it for him using that recipe for zuchinni and squash instead of noodles but its pretty hot here.. and I can't locate the recipe, anyone have it? I looked on eggface's profile and still couldn't find it. Molly I think you have it? Do you mind sharing it again? I couldn't get any zuchinni or squash at my local market so I did get a bunch of fresh spinich but imagine this wouldn't hold up well.. hmmm gotta think on that. So the rest of the day will be kinda by ear.

Here's the recipe:
This is a recipe from Eating Well After Weight Loss Surgery (pg. 96) that I have altered a bit to suit myself. Turned out delicious, I thought!
Un-Pasta lasagna with Tomato Sauce
1 large zucchini, peeled and sliced lengthwise in 1/4" slabs (need 9 slabs)
1/2 teaspoon salt
olive oil
1/2 pound low-fat turkey sausages (sweet Italian-style) about 2
1 cup chopped red onion
2 garlic cloves, minced
2 tablespoons tomato paste
1/8 teaspoon cayenne pepper
1 teaspoon dried Italian season mix
1 14.5-ounce can diced tomatoes, drained
1/2 cup sherry (recipe calls for dry red wine but I had sherry to use up)
1/2 packet splenda
3 tablespoons fresh basil (recipe calls for 1 tablespoon fresh or 1 teaspoon dried basil, chopped)
1/2 cup part-skim mozzarella cheese, shredded
1/2 cup fat-free ricotta cheese
3 tablespoons grated Parmesan cheese
salt and pepper to taste
1. Preheat oven to 400 degrees.
2. Lay zucchini slices on a double thickness of paper towels or cotton towel, sprinkle with salt, cover with more towels, and let stand for 15 minutes.
3. Line a cookie sheet with aluminum foil and spray with cooking spray. Lay zucchini slices in 1 layer and bake for 15 minutes, then remove from oven and let cool.
4. Lightly coat bottom of a cast-iron skillet with olive oil and preheat. Remove sausage meat from casing and saute for 5 minutes over medium heat. Remove from skillet and discard any fat in pan. (recipe calls for a nonstick pan but I am trying to use the cast-iron pan to increase my intake of iron)
5. Add onion and garlic to pan and saute for 3 minutes, stirring constantly.
6. Add tomato paste to onion and cook, stirring, until tomato paste begins to darken, about 1 minute.
7. Add diced tomatoes, wine, sweetener, and basil and bring to a gentle boil; then reduce heat and simmer for 5 minutes. Add sauteed sausage to mixture.
8. In a small bowl, combine mozzarella and ricotta cheeses with 2 tablespoons of parmesan.
9. Spoon 1/3 of tomato sauce mixture in the bottom of an 8" square baking pan (sprayed with nonstick cooking spray). Lay 3 slices of zucchini on top, then layer on 1/3 of the cheese mixture down the center of each slice. Repeat layers, ending with cheese layer. Sprinkle with remaining 1 tablespoon parmesan cheese and bake for 40 minutes.
10. Serve and add salt and pepper to taste.
Divide into 6 equal servings. (recipe calls for 4)
Calories: 200, protein:16 gr., fat: 8.7 gr., carbohydrate: 12.5, cholesterol: 43 gr., fiber: 2.3 gr., sodium 1159 mg.
Cookbook says this freezes well as leftovers.
No, I didn't use Sherry...I had some plain white wine in the fridge that needed to be used. I think Sherry has too much sugar in it. Now you have me curious: I thought the calories in wine were primarily in the alcohol content, which burns off during cooking and would leave you with just the natural sugars from the grapes themselves. ?? Hmmm....
Worrying about the sugars is what has kept me from drinking the bottle of Fre that I have had in the fridge for months now. (alcohol free wine but it has something like close to 10 grams of sugar for half a cup...can't remember now) At this rate, I think I'll just leave it in there and save it for Thanksgiving.

Busy Monday, as usual. Right after work I raced to get my hair done. First time ever getting it dyed. I hope I tipped enough...she spent two hours on it and I tipped $20. Is that enough? Sorry...not a big roller here or have much of a social life so I don't know these things.
Came home and logged on here right away to catch up with my food log and ya'll and now I'm in a pickle...very hungry for 'dinner' but my numbers are already high. It looks like I need to have a salad with nothing on it and go straight to bed. Yah, right that'll happen.... So here's the day:
1) frosty protein shake (not too much longer on these, it is cold at night now!)
2) took a guess counting frittatta calories...someone at work made it just for me
3) 3 turkey/cheese rollups, 2 cups watermelon (eaten over two breaks)
4) GNC cinnamon bun bar
5) half a pumpkin bar and 1 tab. ff cream cheese 'frosting'

--a single-serve baggie of dehydrated fruit
calories: 970, carbs: 72, fats: 13, protein: 93
Have been drinking a lot of water today. Maybe I'll have some herbal tea and think about the dinner options a little. Don't want to wait too long or I'll start grazing. This isn't head hunger; I need to put something, anything in there!
