Yes it is a PERFECT fudge recipe for bypass patients! It is totally like fudge in consistency!!
I do taste the peanut butter, not gonna lie. It isn't overly peanut buttery so I am not sure how your soynut butter would taste, but id give it a whirl!
It is PLENTY chocolately enough.. no cocoa powder needed, very rich. I did use quite a bit of splenda to get it sweet enough and glad I did.
I made what the recipe called for which was a 9 x 13 pan. I cut it into 24 bars using the 1/2 pan. It is rich!

You have no idea how happy this makes me, Melissa!!! I did break down and buy a package of sf Hershey dark chocolate bars today. The pms'ing thing is getting to me and one made me supremely happy. I made sure to have the ladies at the salon pass it around and they all liked it and commented that it didn't taste like sugar free. (duh, would a former fattie choose nasty chocolate?...I think not!)
Oh, girlfriend...I am going to make this and cut it into fudge-size squares and freeze it for the holidays and maybe even 'stress' times. I even have pretty little bon-bon paper liners to put it into! Woohoo! It should be a much healthier alternative to the store-bought chocolates. PLUS...no sugar alcohols!!!!

Aw you are welcome. Could even substitute some chopped nut pieces for the oats if u wanted. I told my husband well if this isn't the answer for the PMS chocolate need then I don't know what is!! I am glad you are excited about it. I also am as I want to enjoy some holiday treats too around the holidays with everyone else and now I certainly won't feel deprived!! Yeah!
