Stuffed Green Peppers Recipe

4 green Peppers 1 lb extra lean ground beef 2 cups brown rice 1/4 cup chopped onion 2 - 8 oz cans of hunts tomato sauce 1 tsp of minced garlic 1 1/4 tsp of salt 1/8 tsp pepper 1 egg Directions: Preheat oven to 350 degrees. Spray a cassarole dishes with pam cooking spray and set aside. Cut your peppers lengthwise in half. Remove the insides of the pepper and wash. Par boil the halves for 3 minutes. Set aside. Saute your 1/4 cup cup chopped onion with a bit of pam cooking spray or extra virgin olive oil so they aren't so crisp. Remove from the stove and set aside. Mix beef, rice (I use minute rice), egg, 4 oz of sauce (1/2 of an 8 oz can) salt and pepper together. Divide the mixture into 8 parts and stuff each pepper half and place each one upright into the cassarole dish. Pour the rest of the sauce, 1 1/2 cans over the rest of the peppers. Cover with foil and bake for 30-45 mins at 350 degrees. Enjoy!

Nope, they won't eat that either. I haven't had that since my grandma passed. Hers was so yummy too!

You're so sweet, Melissa! Do you make borscht too? Grandma's family background was English and Welsh but she made a mean boscht also. I was really close to her and miss her so much...no surprise that I grew up with the food equals love mentality. She lived it and breathed it. (struggled with her weight all her life too)

I sure wish I had the time and dedication to to this. I reminds me of my childhood. I will print the recepie and maybe, maybe one day I will make it for the entire family eventhough my son will probably give me a hard time. Oh well, he needs to learn to eat good things. Beatriz
