Pumpkin bar topping!

Hi All.. well I got home from work this morning and couldn't wait to defrost one of Molly's scrumptious pumpkin bars.. mmm. But I will say I have been wondering how I could give that little bar a little bit more of something. I came up with an awesome cream cheese frosting! I took 1 tablespoon of FF cream cheese, a small shake of splenda (sorry didn't measure) and a dab of vanilla.. WALA cream cheese frosting all for about 15 cals! Yes! Yum.. try it Molly, you will love it! I made sure i got it really cold before i put it on my bar! Spread it on. Going to make a batch of it up so I can just spread it on a bar anytime I want! Hugs!

I made a reply but it got eaten and I promise it wasn't me who ate it. I am too busy eating my pumpkin bar with the cream cheese frosting. Wow, is it delicious!!! I'm thinking this topping would also be extra yummy on top of PK's pumpkin protein pies. I made a batch of them last night and didn't follow the baking directions carefully so they are really weird looking and a bit dry but still very, very tasty. I love fall and I LOVE being able to bake something even I can eat again. Happy, happy, joy, joy!!! Molly

I need to make PK's also.. sounds devine! I love cream cheese frosting with anything pumpkin and for me it just needed that little extra something.. im in total hog heaven loving that we can have our treats and be done in a way that is healthy and satisfying. I don't know what I would do without pumpkin stuff this year.. I really really appreciate you taking the time to figure this out for us Molly! thank you!! I am using the leftover pumpkin that I get from these recipes to make pumpkin pie shakes. I got the recipe from MV's website (eggface). 1/4 cup pumpkin (optional 2 tbs of ff cream cheese) 1 scoop vanilla protein powder dash of pumpkin spice dash of vanilla SF syrup 8 oz of water/ice cubes (I might use 1/2 soy and 1/2 water for a richer taste!) Gonna try it tonight let you know what I think!

Melissa, I think I will buy one brick of ff cream cheese just to devote to this topping. I'll make it up in it's own container and have it ready to go and to measure out whenever something needs a good topper. You are so clever, thank you for coming up with this recipe and sharing it!
