Recipe and Weekend Strategies!
Look out, folks...here comes another WEEKEND! (insert panicked scream here)
Today I am going to drink some real coffee in a soy latte for some major ZIP and get busy cooking healthy things to have ready to eat. Here are my plans:
Make a batch of Melissa's Mini Crustless quiches to freeze
-also a batch of zucchini lasagne to portion out and freeze
-some veggie and egg beaters frittatta (ditto)
Gonna chop up a big watermelon so that I can grab and mun*****ase the carb demons attack (and make another batch of marinated cukes)
Invite my sister over for a sewing party so that I won't be tempted to hang out in the kitchen and nibble! She will see my to-do list and help me get my butt moving (she'll be over either Sat. or Sun).
Listen to my ipod or play the stereo if DH isn't around, that always gets me motivated to MOVE!
Ok, what are your plans???

And, here's the 'recipe' for the yummy taco chicken salad I made yesterday. More of a method than a recipe and maybe you've already done this before. It just hit the spot with me so well and didn't get stuck!
4 frozen, bone-in chicken breasts (with skin)
1 packet taco seasoning
1 16 oz. can mexican-seasoned tomatoes (like Ro-tel but not so hot)
Spray 5 qt. crock pot with nonstick spray, place frozen chicken in crock pot. Top with tomatoes, juice and all. Sprinkle taco seasoning packet over. Cover tightly and start cooking on low. Mine cooked from 4 a.m. to 4 p.m. at which point I shut it off and removed the chicken. I skinned, deboned and shredded the meat and returned it to the pot to mix gently then made a salad with it. My salad was a small plate of greens topped with 1/4 avacado, 2 tablespoons ff sour cream and about half a cup of the chicken mixture topped with 1 oz. pre-sliced Kraft 2% sharp cheddar. Sooo tasty!

Sounds delish Molly, I will try to make this when I get back from Kansas City (going next week after I get done with work on Monday). Sounds wonderful. Hey I also made something similar using the spicy black bean burger from morning star. I put it on a leaf of chopped romaine, some red onoin, black olives, tbsp of light sour cream and 2 tbsp of black bean salsa (from walmart, highly recommend it sarahlicious recommended it to me from the main board) it was EXCELLENT for a quick meal... like your weekend strategy too.. when i get organized like that it feels SOO good.. have a great weekend Molly!
Ooh, that sounds good! How spicy is that spicy black bean burger? Mildly so or make your mouth burn? Do you think it would make Pouchie's ulcers wake up? My taste buds like spicy but not so much for Pouchie.
Going to write down the black bean salsa on my shopping list for the next Wal-Mart excursion. Sounds good!
BTW...since the calendar weekend amounts to a whole week's worth of work for you do you have our type of weekend issues during the week after you have rested up on Monday?

Hey Molly, its mildly spicy, I don't think it would hurt your tummy but I could be wrong.. since surgery I don't like things near as spicy as I did preop and I like this. Does that help? lol.. The black beans salsa at walmart I buy in Mild.. I will never use regular salsa again. It does have some black beans whole in it and a few pieces of corn tho, not much..
Honestly i do ok at home.. as long as I can be doing stuff.. I stay busy online with PK lol.. we play some online games and I also do projects around the house.. it keeps me busy. At work I eat on a schedule and at home I eat on a schedule.. the week before my period is the only week I truly really struggle. I chew a lot of gum too.. i know bad melissa, but I do.
