Hi Melissa I made these (LOVED THEM) but mine only made 6 muffins. I do not think I used as much cheese as you did and only used onion, bell peppers, 3 T bacon bits and 1/4 cup cheese. I do not know if egg beaters come in different size cartons but mine was a 4 egg carton. Is the ones you use a 4 egg or more. I LOVED them!! D

Hi Diana.. the one I used has 1/4 cup servings with 8 total servings.. and I believe 1/4 cup = 1 egg, so 8 eggs I am pretty sure. This is the smallest carton our walmart carried so sorry if I lead you wrong.. maybe there is a smaller one than that out there? I do put alot of chunky stuff in mine also.. 1 cup broccoli etc.. makes for more volume and that could make a difference too. Hope this helps and glad you liked them!

OK...I know I sound like a COMPLETE IDIOT but I do think we have the same carton. Mine says 1 carton is 4 eggs but they are in a 2 pack so if you used both packs it is 8. I just used the 1 carton so that is 4 eggs in mine and it made 6 mufins BUT I did not add as much stuff to mine but I LOVE them and that is ALL that matters THANKS SOO MUCH for posting this. Diana

Lol you are NOT an idiot! stop that! Mine was a single carton, no two-pack.. how interesting that they make them that way!
