Recipe: Crustless Mini Quiches - repost with a calorie saving change!
I have posted this before but I used an egg substitute today and it turned out just as good and saved 300 cals overall for the entire recipe.
Ingredients:
1 small carton of egg beaters
1 cup low fat monteray jack cheese
4 oz of ham diced
2 oz onion chopped
2 oz green pepper chopped
1 cup broccoli tops chopped
salt and pepper, garlic powder to taste
Mix all together and pour into a muffin pan that has been sprayed with pam. Bake for 30 mins. They can be frozen and nice for "protein meals on the go".
Calories 72, protein 9, carbs 2, fats 3 per muffin.
Sometimes I eat one with some fruit other times I just have 2 and fills me perfectly.
Hope you love them like I do. You can switch it up and put whatever u want in them.

Actually I have but when I went to Barnes and Noble I realized there isn't many "WLS cookbooks" on the shelves but there are quite a few if you search on Amazon.com. It's basically a southbeach style of eating.. low carb, low fat or good fats (like EVOO) and high protein, whole grains.. so I donno if its worth my while but I do a lot of cooking now and love the foods I eat, my best joy is sharing them with people I love and care about here on OH. ;o) They make my life so much more fulfilled eating wise and easier with RNY. Thanks for the suggestion, it is still something in the back of my mind. I have all my recipes saved to a word document if anyone is interested in them.
