melissa-need you cottage cheese recipie
Cottage Cheese Pancakes
1/4 cup cottage cheese
1 egg
2 tbsp of whole wheat flour
I also add:
1/4 cup of fresh or thawed from frozen blueberries (set 10 aside)
generous dash of cinnamon
1 pkg of sugar substitute (or teaspoon)
dash of vanilla
Directions:
Mix all ingredients besides the blueberries in a magic bullet or blender. Fold those in after you mix up the ingredients. spray a pan with pam and bring it to medium-high heat. Pour half of mixture into pan to make first pancake, flip over. Makes 2. Then add some SF syrup and light whipping cream and your 10 remaining blueberries.. enjoy! Yum!!!!
Melissa - I made these pancakes this am for the first time.... WOW... they were so so so so so good! I added the generous dash of cinnamon and that made them really good - adds fiber too! Thanks so very much, they were so so so so good!
