Protein Pumpkin Pancake Recipe

It's pretty good... I just tried it today! Eating it now. Not sure if I like it better than the cottage cheese pancake one but I still really like this one! Ingredients (I cut the original recipe in half, be too much for us otherwise. 3 egg whites or equivilent in egg substitute 1/6 can of canned pumpkin 1/2 scoop of vanilla protein powder 1 tsp of vanilla pumpkin pie seasoning to taste (I like a lot) 1/8 tsp of salt 2 tsp of sugar substitute 1/6 cupof oats (old fashioned oatmeal stuff) Mix all together in bullet and spray pan with cooking spray. Cook on medium-high heat and flip once. Top with SF syrup and light whipping cream. Not a strong pumpkin taste.. you might want more pumpkin if you like a stronger taste. Pretty good.. makes 2 pancakes, here are the stats: Cals 175 (without syrup/whipping cream). 25 proteins, 14 carbs, 1 fat.

Yummy I might try that....also has oatmeal in it(beware possible dump for Erin) I will try in, maybe I'll eat some ham with it. I love, love love pumpkin

Thank you for another yummy sounding recipe!! How did it 'hold' you, Melissa? The cottage cheese pancakes hold me a long time and I hope this will too. Can't wait to give it a try. I will dig out my pumpkin custard recipe first so that I have something to do with the leftover pumpkin. (and I'll post it as soon as I dig it out) I'm with Erin...love pumpkin! Molly

I almost wonder if a squirt of cinnamon dolce would make it even better.. its good more bland than I expected but still very good. It held me great!

I bet it would!!! I would add maybe a touch more pumpkin and oats tho.. it needs a tad bit more flavor. Shot of cinnamon dolce would be good too.

Thank you so much! Can't wait to give this a try. I was craving something sweet really bad last night and gave in, had half one of my 'sweetest' protein bars and promptly dumped from it. I LOVE MY RNY! Best tool I have EVER run across. So I went to bed and promised pouchie to be a good girl today. So doubt that I'll try this today, I plan on eating pretty bland. ;) Molly

Aw Molly sorry you dumped.. but at the same time I would be ticked if I didn't dump.. I haven't tried anything way out of league yet to see if I dump.. sounds like you are an ultrasensative dumper.. which is a great thing in a way.. I just don't wanna know either way.. really afraid to be sick and really really afraid to NOT get sick.. Hope you feel better today! Hugs..
