Chicken Satay
Here is the recipe I was given today at work when we had our Asian-themed potluck. The co-worker who brought them grilled them to perfection...not a bit dry and I was able to eat two skewers (accompanied by some of my marinated cucumbers between bites for moistening) without any trouble. Very yummy and I think we could change the recipe to suit ourselves and our family's tastes easily.
Chicken Satay
1/4 cup smooth peanut butter
1 cup soy sauce (I'd use low sodium)
1 cup lemon or lime juice
2 tab. brown sugar (again, substitute sugar-free?)
1/4 up curry powder
4 cloves garlic, crushed
2 tsp. hot sauce
12 skinless, boneless chicken breast halves cut into tenders
Combine peanut butter, soy sauce, juice, brown sugar, curry, garlic and hot sauce. Mix well, place chicken tenders in marinade and chill at least 2 hours or overnight. Preheat grill to high heat, thread chicken onto soaked bamboo skewers and grill till done...about 5 minutes per side.
