New Recipe I came up with!

I posted this on the main and RNY board but thought I should post here too! Enjoy... Helllo and Good Morning! I just made the most scrumptious breakfast ever since surgery. I really recommend it to you you guys for a quick breakfast meal on the go! These could be frozen I am sure and wow what a yummy thing they are!!! Crustless Mini Quiches Ingredients: 7 large eggs 1/2 cup skim milk 1 cup low fat monteray jack cheese 4 oz diced lean ham steak 1/2 cup chopped onion 1 cup chopped broccoli (minus the stems) garlic powder, salt and ground pepper to taste Directions: Whiz up your eggs, milk and seasonings in your bullet or food processor to get it real fluffy. In a separate bowl add your broccoli and onion with some water and microwave this for 1.5 minutes (to start the cooking process so they aren't all hard and crunchy in your quiche). Add this to your mixture. I poured my egg mixture into a bowl by the way then added the veggies. Then add your cheese and dice ham. Spray a 12 cup muffin pan with pam or whatever you use. Then by dipping a 1/4 cup measuring cup into the mixture get good scoop of the chunky stuff and the egg solution and pour into each cup. I almost went to the top, maybe a 1/2 inch or so down from the top. Make sure they are all even then bake at 350 degrees for 30 mins. They are so cute and if you have just one then add some fresh fruit with it. It's like I'm in a little tea room having brunch how fun! Here is the breakdown for the nutritional part. I figured it out using fitday! I did both with cheese and without. The cheese helps with the protein (i recommend it with cheese) but you could also make it without to save on fat cals.. I broke it down both ways. With Cheese for each muffin: 92.6 cals, 5.4 fats, 1.9 carbs, 8.8 proteins. Without Cheese for each muffin: 63.1 cals, 2.6 fats, carbs don't change hardly at all, 6.2 proteins. Today I am having one muffin with cheese and 1/3 cup of blueberries with a squirt of light rhedi whip.. YUM! You could substitute veggies if you don't like onion and broccoli, ENJOY!

Thanks Melissa!! I tried your cottage cheese pancakes this weeked I ate 2 and my daughter had the other one. Very good I will make them again. THe Kashi golean did not make me dump and neither did the pancakes!! These little quiches remind of the ones from southbeach diet. I had made them before. I made them with spinich(if you like spinich) and monterrey jack cheese yummy. I need to make them again. Kinda like little frittas. Erin

Aw Erin so glad you didn't dump. Sheesh I make 2 larger pancakes with that and can eat the whole thing... eek. I have been since month 4. The Kashi is pretty good isn't it? I don't eat it but once or twice a week b/c of the carbs but it is all good carbs and u can subtract all the fiber so that brings the netcarbs way down! I want to try those quiches with spinach and maybe some roasted red pepper and red fat feta cheese. Yum!

Melissa, thank you for sharing this great recipe! I will add it to my file and try it as soon as I run out of my frozen Mini Mushroom and Sausage Quiches. This recipe came from another OH person (can't remember her name now, argh) a few months ago. Here is the link: http://food.yahoo.com/recipes/eatingwell/408/mini-mushroom-and-sausage-quiches We had an asian-themed potluck at work today and I got to try some chicken satay on skewers. The guy who made them bbq'd them perfectly and I was actually able to eat two of them. A victory over non-chopped chicken...YES! I will post his recipe here too, it is nice to be able to have something that everybody can eat. But I will check first...I could swear there is a recipe for this same thing in one of my wls books.
