Cooking for after WLS

Anyone have any good recipes? Like low fat low carb, or a good website that has some? I have the Eating well after weight loss surgery one. I've tried 2, one good.. one yuck (but thats because I didn't know the difference between CANADIAN bacon and regular. LMBO)

Liz, try out: www.eatingwell.com, Susan Maria Leach's book "Before and After", www.beforeandafterchat.com, www.foodnetwork.com, www.sparkpeople.com, www.fitday.com and even the Weigh****cher's website. All have some good-sounding recipes if you go looking for the light and healthy selections and most of them have all the nutritional info, too. From the book you already have I have tried the Creamed Spinach recipe (yum...but I did have to put it through the food processor because the spinach was too stringy), Mashed Cauliflower, Devilled Egg Salad and Simple Horseradish Sauce. Am going to make the Mom's Pot roast and the garlic sauce too. Have liked all of them so far. Molly

Also, if you look at the nutrition information, Yahoo!'s food recipe section is really good too. I found a mini-crustless quiche there, that I love to make for breakfast, and I can even freeze them for up to a month!

Heather! You posted that mini-quiche link here, right? If it *was* you...thank you! That is where I got that eatingwell.com link and have found a lot of good recipes there. Plus, I made the mini-crustless quiche recipe but made it in a mini-muffin pan so I have a bazillion of them frozen now. That little bit of swiss cheese really makes it taste good! I made a double batch and shared it with the family, they have to eat MY food now and not the other way around. LOL I'll drag them into a healthier lifestyle whether they like it or not. Molly

Yup, that was me. I love it with sweet Italian turkey sausage and the swiss cheese. My husband has no say so.. lol.. he eats what I buy, since I do the grocery shopping. He's not complaining though, because he's diabetic.

My husband loves them too.. so I have to watch and make sure he doesn't scarf them before I can freeze some. I too make then in smaller sized muffin pans.. I use my pretty sunflower design. Ohh those mini quiche's look good too!!! I made this one last night. I can't find the title, but its Spinach Quiche.. I doubled the recipe and used a lasagne pan. VERY VERY GOOD!!!!!! I was thinking of adding some sausage next time too! & if you never tried muenster cheese (like me) LOL, try it!! its very mild, it didn't even taste like a weird cheese..LOL I also mixed in colby and chedder because I ran out of the muenster. I will be making this again!!!! INGREDIENTS 1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese 1/4 teaspoon salt 1/8 teaspoon ground black pepper DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

YES!!! I have always loved Muenster cheese and found that the harder varieties are one of the cheese's I can eat that won't make me sick... I really like the Sargento brand... I eat it as a snack if I'm feeling hungry... I've actually started getting an appetite back although it still only takes a few bites to satisfy it!

The South Beach Diet has good food for us too. Check out SOME of their frozen food and their reciepies are good as well.
