favorite recipes?
ok, i'm 4 months out now. (surgery 12/20/05) and was wondering what your favorite recipe/and or meal was.. i'm finding that i'm eating a lot of th same things.. i have a lentil soup that i love
1 cup of chopped celery
1 cup of chopped onions
1 cup of chopped carrots
saute in olive oil and a little butter
then take 1 1/2 cups of lentils and simmer, covered with about 2 cups of chicken broth. keep an eye on this, because you will have to add more broth. simmer about an hour, then combine with veggies
Then add:
1 cup of canned tomatoes (i use glen muir)
1 T red wine
1 T red wine vinegar
1/2 T brown sugar (i use brown sugar twin)
Simmer another 1/2 hour.. Serve with fresh parmesean on top!
My favorite recipe is CHILI! Ever since surgery I just Adore chili - this makes wayyy too much but you can feed it to your family too and it's scrummy. Keeps awesome in the refrigerator for days of leftovers as well. And with the beans it's good protein! FYI, I use all organic products even canned stuff cuz it tastes better - I highly recommend that:
approximately 2 tablespoons of olive oil - more may be needed to keep vegetables from sticking
1 large red onion chopped (not too finely)
1 red bell pepper chopped (not too finely)
1 green bell pepper chopped (not too finely)
1/2 lb. of ground turkey
1 28 oz. can of diced tomatoes
1 14 oz. can of kidney beans
1 14 oz. can of black beans
1 14 oz. can of tomato sauce
3-4 cloves of fresh garlic minced
Spice quantities are VERY subjective - I never make this the same twice as I just toss in the spices till it smells good
approximately 2 TBSP ground cumin (vary greatly depending on taste - I love it, so I'm pretty liberal - if you hate cumin, cut this back)
approximately 1 tsp of turmeric (use in relative quantities to the cumin)
approximately 1 tsp of celery salt
approximately 1/2 tsp of cayenne powder (I have been known to go as high as 1-2 tsp of this, bu****ch out, cayenne is where the burn is at!!)
approximately 2 tsp of paprika
approximately 1/2 tsp of ground black pepper - more for additional spiciness
Brown the ground turkey and set aside. Heat a large stock pot on high and put in the olive oil. Put in the onion and garlic and toss in all the spices. Don't worry if the smell seems strong now. The onion and garlic should be heavily coated in spice. Cook, stirring frequently until onion is tender but not browned. Toss in the peppers and continue cooking until they just begin to soften. Add ALL the cans of beans and tomatoes including tomato sauce into the pot WITH their juice - do not strain any of them. Also add the browned turkey. Bring to boil then reduce heat to maintain simmer. Stir after simmering about once every 10 minutes or so. I tend to coo****il everything is very soft. Serve anywhere from immediately to days later - toss a little shredded cheddar and green onions on for additional yumminess.

That chilli sounds a lot like mine..I love it!
Here is one of my favorites, a Persian recipe.
Dice a large onion and saute in a table spoon of olive oil till tender.
Add two boneless chicken breasts cut into 1" squares and brown. Add salt, pepper and a table spoon of tumeric.
chop up each, 3 bunches of cilantro, 1 bunch Parsley, 2 bunches green onion and about two or three cups of finely chopped fresh spinach and to the pot. You can use dried cilantro, parsley and chives and frozen spinach.
Slice two stalks of celery, add to the pot.
Add 1/4 cup of dried mint.
stir till dry.
Add water two inches above the mixture.
bring to a boil, then add:
1 medium or small potatoe (optional) It just thickens the soup.
1 can of black eye peas
1 can of kidney beans
Let simmer, covered, on low, for about 1 hour, then add the juice of 1 lime and three cloves of fresh chopped garlic. Adjust salt and pepper to taste.
This is a wonderful dish. I serve this with Basmatti rice for the family, but I eat it alone. It's soooo good for you.
I have tried the turkey meatballs (REALLY GOOD!) and broccoli quiche recipe from Susan Maria's website - I modified the quiche -
Saute 1/2 onion in olive oil
Cook and drain 1/2 lb of Turkey Breakfast Sausage
1 small can of mushrooms - drained
Mix all of these together
In seperate bowl mix:
3/4 cup low fat ricotta
about 1 cup of egg beaters (or other egg substitute
1 tsp salt
1 tsp allspice and/or cloves and/or nutmeg
1/4 tsp pepper
Mix above well
Add meat/veggie mixture
Add 1 1/2 cups shredded LF cheddar (I use the FF Smart Beat - it melts great!!)
Put in pie plate bake about 40 minutes at 350!
Quick, Easy, and YUMMY!!
Mexican Chicken
1 Jar Salsa (any variety about 10 oz??)
1 Can of Kidney Beans (or black beans) drained
2 lbs of skinless chicken thighs
Throw all of above together in pot - Simmer for a few hours.
Right before it is done add 1/2 jar of low fat cheddar cheese sauce (I use the Carb Control variety).
This is really soft and easy on the pouch - I pulled the chicken off the bone to make a "sloppy" mess of it - tastes great!
I also made modified crustless pizza casserole - I found on another part of the OH website -
1 lb ground turkey breast - cook and drain
1 small onion - Saute with a little olive oil
1 jar of Classico 4 Cheese Sauce (this variety has low sugar and decent protein - I think 5 g of sugar and 3 g of protein)
about 2 cups of low fat ricotta (not sure of exact quantity I used)
mushrooms or other veggies
1 1/2 cups shredded mozzarella (Again I use the FF Smart Beat variety - melts great!!)
Coat Casserole dish with cooking spray - then layer
Bottom - Turkey and Onion
1/2 jar of sauce
Ricotta
Any vegies you want
1/2 jar of sauce
Mozzarella
Bake until cheese melts and heated through - I baked mine for 45 minutes at 275. This is nice and gooey - a little watery - not sure why - but I brought to a covered dish supper and everyone enjoyed it!!
