What is everyone eating?
Hey Ron,
Here's what I eat a lot of:
honey smoked salmon (get it at sams)
any kinds of fish (grilled or broiled)
scallops and shrimp (grilled or boiled)
chicken saled
tuna
steak
cottage cheese
grilled asparagus
salads
brussel sprouts
broccoli & cheese
cheese sticks
yogurt
chili
sf popcycles and sf philly swirs
fresh fruit
really I eat about any vegetables - I love vegetables.
I can eat anything, but this is generally what I stick to because it's yummy and good for me.

Hi Ron. I'm bored too. It's kind of a good thing in the short run bcs I'm just not that interested in food - the kind I CAN eat, that is. I miss the sweets, so I'm having the s/f jello, and a little bit of s/f candy. It was helpful over Easter bcs I could leave the real stuff alone. And if you eat more than 1-2 pieces, you know what will happen. I've also been using some of the low-carb/high protein snack bars. Just the ones from the cereal aisle, check the labels. I have the protein shake pretty much every day, but I try to change the flavorings so I dont' get too bored with it. For meals, it helps to use some spices and stronger flavorings - it kind of feels like more food if it has an intense taste. Like you could dunk the string cheese in some salsa, or put hot sauce on the scrambled eggs, cinnamon & vanilla & splenda in the cottage cheese. I just tried chinese for the first time since surgery (12/30/04) last week - steamed chicken breast & steamed broccoli, with a little bit of sauce on the side. It was pretty good, although the portion was way too huge. Also, my husband's new job, if we go out, is to get dessert so that I can have ONE bite of it. Much more than that, and I'll be sick. Oh, and I've been using a lot of flavored decaf teas and coffees. Because I'm bored with water, too. Good luck.
Trying to eat, is TRYING... I don't have the desire, much, when I do, these are the items I try to select... if I can
CREAMY Tuna Salad
Egg Salad
Chicken Salads
Cheese crisps (Cheetos)
Eggs (boiled, over easy and scrambled - lightly)
Lemon Pepper Fish Fillets (Van Kamps)
Mozzarella cheese sticks
Chicken tenderloins (cut in small cubes with salt/pepper)
Corn on the Cob
Cabbage & Mixed Greens (cooked southern style)
Cambell's Low Carb soups/low sodium
Tortia shell wraped with cheese
Cheese stick & cheese dip
Brussle Sprouts
Chicken strips baken in oven with melted cheese
Tomatoes
... and a few more protein things
However, I can't eat much, but try to eat some.
Vera,
Hi Ron,
Mostly I eat string cheese and cashews. That has been my no fail diet for a long time. Yesterday I had way to many cheesy potatos (I normally don't eat any) but they tasted so good. I feel so guilty. I also eat steak and any veggies I can get my hands on. I have been drinking the Atkins Carb countdown yogurt smoothies for breakfast. They seem to help me thru the day. I also have 3 protein drinks during the day. I NEED SOME PASTA!!!!

Ron , I too am getting bored, but i can pretty much eat anything
I've made speghetti with low carb noodles, green peppers and sugar free pasta sauce and it was good.
i also love eggs with 1 slice of english muffin, usually can't eat the whole thing . I also have a recipe for "protein ball nobake type cookies" I have'nt tried them yet but plan to. Also for easter I found a low carb cheesecake, it was so.......... good! a bite or 2 satisfied me.
low-carb bagel w/ a little cream cheee, pickles, and lots of chicken, i make chicken enchilada, ckn salad, ckn and stir fry,
The only thing i can't eat is fish, i've tried 3 different kinds and it feels stuck every time.
well good luck, if you get any new ideas let me know!!!!
