Breakfast Casserole Original Post by Kary W at 8:05 AM PST on 01/21/2004 Kingwood, TX - RNY (01/23/2002) Ingredients: 1 2.5" onion (chopped) 1 8oz can sliced mushrooms (drained) 1 pound Jimmy Dean Pork Sausage 1 pint Land 'o Lakes Whipping Cream 2 cups Shredded Cheese 10 jumbo Eggs Vegetable Spray Salt Pepper Cayenne Pepper Directions: Chop medium onion (8.7 carbs) and add to 8 oz. can of drained mushrooms (2-4 carbs).....saute in butter in the microwave or on the stovetop until soft...set aside. Whip up a mixture of 8-10 eggs (4.8-6 carbs) and 1 pint whipping creme (13-16 carbs), salt and pepper...set aside. Brown in frying pan 1 lb. package bulk Jimmy Dean (or any brand pure meat) sausage until pink is gone. Spray 9x13 pan with pam or other spray.....pour in thin layer of egg mixture.......cover with sausage mixture.....sprinkle with sauteed mushrooms and onions...cover with 2 cups shredded cheese (I've usually used Colby-Jack, but Kraft or Sargento Taco Blends are tasty, too)...pour egg mixture evenly over top...bake at 350 until brown...(times can vary by oven...ours takes 20-25 minutes.) Cut into squares as needed and re-heat in microwave...makes breakfast for several mornings. Can also be individually "baggied" and stored in freezer for up to a couple of weeks for handy use! ********************** I halved it and cut it into sixteen pieces... the total nutritional value (without the onions... YUCK) is: 100 calories 8 fat 1 carb 5 protein it's a lil high on the fat side... next time I think I will use turkey sausage... It tastes so good I've been eating it for breakfast every morning this week!

Brooke Thanks for posting this menu. I am also bored with food (same old thing). I get to a point where I don't want to eat cause it's not worth the 2-3oz effort. I guess I am greiving food (my old best friend). Thanks again Angy

I understand what you mean totally.. I'll go to the kitchen, look in the fridge, look in the cupboards and the pantry and then decide I dont really want anything...

Hey Brooke - I make this also, but I leave out the whipping cream and use egg beaters instead of real eggs. This reduces the calories significantly. It's wonderful. I also will add other things like ham or asparagus, whatever I'm in the mood for. Candy 266/218/130

Yum!! I think I'll try that, or maybe I'll use skim milk instead of the cream so the eggs are a little fluffier!! Thanks

I made it yesterday with the whipping cream and the onions and it was wonderful. I didn't cut it in half, so I'm hoping it will freeze OK. Sue O.
