I ate swiss cheese today!!
I've been eating all kinds of cheeses with no problem and they seem to be fine with me. My favorite thing to do is make a cheese crisp. It works best with lowfat cheese, but you can use any kind. Take 1/4 cup shredded cheese (I like lowfat cheddar best) and microwave on parchment paper for 2 1/2 minutes. Let it cool and eat. These are so good even my kids ask for them. If you try it, let me know what you think.

Those "cigar rolls" are my saving grace for lunchtime! My nutritionist recommended them at my first follow up visit. I usually do some turkey or pepper ham (low salt) and spread Allouette cheese thinly on the slice before rolling, but was afraid to try pickles. You had no trouble with it, so I will try it next time. I also have no problem with mustard, so I will sometimes "dunk" them into mustard too.
I have only tried Swiss once and had a bad experience with it because I had it in an egg white omellette. I know it was the egg that I still can't tolerate, but now the Swiss hasn't appealed to me since! I do fine with Mozzarella cheese, though.
