Salmon patty recipe--Yummy protein

I made these the other day and I really like them. Of course, I like salmon. Ingredients: 1 can salmon--remove the bones! 7 reduced fat Ritz crackers 2 eggs Parkay butter spray--fat free/calorie free Heat skillet on medium heat. Mix salmon,crackers and eggs into a bowl. Form mixture into patties. Spray each spot each patty will be on in the skillet. Coo****il moisture is gone and outsides are browned. I made about 10 patties. I prefer to eat them cold. I do spray the butter spray on each one before eating to ensure they are moist.

Ok, I have a soulful variation for a Great Salmon Crokett recepie. It is a high protein, fat free way to eat. I hope you guys will try it, as 1 patty packs a full 16g of protein! 1 can of pink salmon (if keep bones, but CRUSH).. adds protein 1/2 onion 1/2 tomato 1/4 green pepper 1 egg 2 shakes each - (Mrs. Dash Lemon Pepper, Mrs. Dash onion blend, Mrs Dash Tomato) 1/2 cup of potato flakes (mash potato flakes, that is) I can't believe it is not butter spray Pre heat oven at 375d Use a cookie sheet, and cover with aluminum foil Spray foil with I can't believe it is not butter - very well In bowl mix: 1 can of pink salmon (bones in or out, they are soft, and adds protein) 1 egg 1/2 onion & 1/2 tomato 1/4 green pepper - (blended till 'mushy') 2 shakes each of Mrs. Dash seasons above Mix the above together, well, till very soft and consistant. Add 1/2 cup of potato flakes Mix with other ingred., till crumbly Form Croketts (in 2-3 oz sizes, Palm size) Makes about 12 croketts Place each on well sprayed cookie sheet Place in rear of oven Bake for approx. 20-30 min, or till brown If you like crispy (to encourage chewing) bake full 30 min. Vera, I have to say that I am usually very cautious about trying recipies but I guess the Lord told me to try this one. Infact after reading it, I got up and went to the grocery store to grab the necesary ingredients, came home and prepared my croquets. They were delicious...I even whipped up some Mango Salsa with black beans. I just wanted to say thank you for sharing such a marvelous high protein meal with us. Keep on sharing and God bless.
