Question about daily intake

Since Nona's post about her plateau, I have been using fitday.com trying to monitor my intake and really trying to lower my carb intake. Today, I had two protein supplements, a tblsp of peanut butter, about 1/2 cup of mixed nuts, and one sugar free chocolate wafer (after I started having shakes from no carbs...I had to have it, couldn't go cold turkey on day one). I have drank about 60 ounces of unsweet tea and plan on drinking about 20 oz of water before bedtime.
Anyhow, after calculating it all, I am way over on the fat grams but okay on the rest. I didn't eat that much today and I know nuts and peanut butter is loaded with fat, but I thought it was the good (if fat is good) fat and I was trying to get in enough protein since I still can't eat meat well.
What am I doing wrong. Will someone please give me an example of their daily meals and snacks. I have no room for anything now, because I am almost over on calories, carbs and way over in fats. I usually eat bunches of veggies, but that Dr. fox's Plateau Busting diet had no veggies on it whatsoever.

I don't know what you are doing wrong, if anything but here is an example of what I eat daily...
Breakfast
1- Breakstone 2% cottage cheese (snack size) with 7 Pringles FAT FREE sour cream and onion chips crunched in for texture.
Drink-
Iced caffeine free Luzianne tea made with Sleepy time tea (takes the bitterness and dryness out of tea) and sweetened with Splenda.
Snacks-
Beef jerky (walmart brand) or about 7-10 macadamia nuts or almonds. (I heard they help you lose weight)
or about a cup of Watermelon chunks.
Lunch-
There is a new great tuna in a pouch, it is Starkist (I think) and is called Sweet and Spicy. It is so good you don't need crackers or any condiments in it. I eat it alone, yum!
Dinner- Usually a Low carb TV dinner as what I cook for the family is usually too carb-y. If the dinner contains pasta or potatos, I don't eat that part, just the meat, some sauce and veggies.
Shame on me, but I DO drink with my meals. I could not choke down meats if not. Meats and eggs came right back up without a drink. I snack a lot during the day, maybe not good for some, but works for me. When I do, it is the above or a few pork rinds or low carb tortillas and dip occasionally. My staples in snacking are the beef jerky, pork rinds and macadamia nuts. I DO splurge sometimes. When I do I get the no sugar added, sweetened with Splenda, Ice cream sandwiches or nutty cones. This is an occasional thing ****il the box is gone)
I have salads occasionally. (Lettuce, garbanzo beans, shredded cheddar, bacon bits (REAL), hard boiled egg or chicken and any dressing that I favor at the time.) Bread rarely (1X month), pasta VERY rarely (1X 2 months), Rice very little but about twice a month.
I read the carbs in everything I am about to buy. If they are high (over 5-10) I don't buy it. (Other than the snac**** creams for a rare treat) I drink almost exclusively the tea recipe that I mentioned above, as tea is a good diuretic. I TRY to keep my calories under 900 per day so I can still lose weight, above that and I don't lose anymore.
I lost 11 pounds last month and this month it looks like it will be around 5-6 pounds. Portion size is about a thin sandwich worth, minus crust. Whatever that weighs. I VERY rarely eat peanut butter because of the fat and I have to put it on crackers to get it down and those have carbs. I eat a banana about once a week for potassium and I eat veggies like broccoli with some 2% american cheese melted on it or green beans boiled in bacon. I try to keep away from most cheeses and only eat them when a special recipe calls for them, not worth the fat grams for the tiny bit of protein. Carbs are the enemy too as your body will burn the carbs you eat rather than the fat that we want burned.
Sorry this is so long. This is about it! I toss in other things, but generally stick to my low fat, low carb rules. Hope this helps!

Here's mine from yesterday.
Breakfast: 1 cup low fat cottage cheese. Some Smuckers low sugar strawberry jam. 5 Triscuits.
Snack, a low fat, low sugar energy bar, 150calories
Lunch, 5oz chuck steak, grilled, 1/2 cup mixed veggies w/1/2tbsp butter
Snack: one nectarine
Supper: 6oz chicken with ff cream of mush. soup. Romain salad, no dressing.
Snack: Low carb bar. 150 calories, low fat
I know I shouldn't eat the bars, but I was hungry for something sweet, and had no more fruit in the house. These were samples a nutritionist gave me and I wanted to try them. They weren't that good, so I won't be buying them. It was about 1250 calories for the day.
I also drank about 60 oz of fluid.
My meals today will be similar, except no protein bars. I'll use drinks instead. Got a new supply from Protein Delight.

I have to admit that I don't keep track of calories, fats and carbs like I should. I do try to eat high protien each day. I also do not dump on sugar ....wish I did!
Yesterday I ate:
Protien drink w/coffee x2 over 3 hour time period 46g protien*everyday
1oz peanuts 8g protien
1oz cheese with 3 baby dill pickels 8g protien
handfull of pretzel sticks
salad w/mozzarella cheese, 2oz baked chicken beast, 13g protien??
2 bites macaroni & cheese
1/2 childrens icecream cone from Dairy Queen
I got about 75g of protien and I always drink 90-100oz of water and crystal light durring the day. I think water is the key for me. The more I drink, the better my weight loss.
I have never had a real plateau. Only 3 individual weeks in 9 months that I showed no loss. Hang in there Staci...your doin' great

Thanks everyone for your replies. It sounds like ya'll eat and drink more than I do, but better stuff. I hate the taste of plain water, but I love unsweet tea and drink about 80 oz a day of that, plus the water from my protein shakes.
Today I had a protein shake, about 2 oz peanuts, 1/2 bag cracklins, 88 oz u/s tea, and 1 cup steamed veggies (broccoli, cauliflower, squash, zuchini, fresh mushrooms and carrots)....the bad things were: about 5 sugar free jelly beans and about 1 oz of cheeze nips. Shame on me. It's the DH's birthday and I ordered out a seafood plate for him, but I will probably eat some cottage cheese or left over pasta.
