Low-carb pasta review!

Just tried the Atkin's spaghetti for the first time tonight (my husband cooked me a special lo-carb Mother's Day dinner!) . It has 13 grams of carbs and 29 grams of protein per serving. And it tastes like it.... No, seriously, it could have been a LOT worse. I really didn't mind the uber-al dente texture so much. Just a little tasteless, but we all know that pasta is mostly a vehicle for the sauce and meatballs anyway. Now, Mueller's also makes a lo-carb pasta, which is higher in carbs, and much lower in protein than Atkins, but it is tastier and a bit softer cooked. I made a TRULY excellent lasagna with it 2 weeks ago. Unfortunately for us, the only ground turkey I could find at the store yesterday was ground turkey BREAST, which makes a hockey-puck of a meatball. Really need to use regular old ground turkey- the blend of dark meat may add a little extra fat, but it's worth it for a softer meatball that you can actually DIGEST. As far as the low-carb spaghetti sauces were concerned, I only looked at a few, but they were only a few carbs lower than most regular (tomato-based) sauces were, so I really didn't see the point in sacrificing taste or money for them. The reason I even bought the Atkin's pasta to begin with, was because of the HIGH protein content. Imagine - eating PASTA, and fulfilling your protein quota at the same time! A dream come true? Not exactly - but definitely a good deal if you're REALLY craving pasta! Donna

Donna, I had tried the atkins pasta in the past and it is !! Could not stand it. However, I did try some whole wheat pasta which is not low carb but at least is a better non white refined fiber to be eating (and is onthe south beach plan) and it was great. Tasted just like regular. Onlly use it as an occasional treat though, and let the family eat most of it and I eat just a little and stick to the meatballs! Lisa G

I don't use a "spaghetti sauce" but make my own with spices and tomato sauce and it is yummy. Also, I like the mueller's lasagna but bought some ronco spaghetti and it was not very good---too rubbery. NOw, I prefer ground beef to ground turkey. If you buy the low fat ground beef it is actually lower in calorie and fat than the turkey and tastes more normal. Christy

We have a company here that it local that is making reduced carb pasta and it happens to be great. It doesn't sofen up or get mushy like regular pasta either...it is made by Martha Gooch...so if you can get it where you are, you really must try it. Chris Open RNY 12/30/03 354/294/???
