R.O.D. Jammin' Jerk Shrimp Quesadilla
Happy Tuesday!! I love this recipe!!
(This recipe will make several quesadilla's)
1 package Margaritaville Jammin' Jerk Shrimp
2 cups shredded Monterey Jack cheese
Low carb Tortilla's
Cook Shrimp per package directions.
For each quesadilla:
In large skillet, add 1 teaspoon olive oil, spread evenly across pan, heat pan to medium high.. Place tortilla in pan and spread some cheese in an even layer across half of the tortilla.. place several shrimp evenly over cheese. As cheese is melting, check bottom of tortilla.. when golden brown, fold the half of the tortilla with nothing on it over the top of the rest of the tortilla.. (think omelet)..
Remove from pan and cut into wedges.

No, I don't cook like this everyday, but I do most days. I love stuff you can make in a short period of time that has lots of flavor. Spicy flavorful foods tend to help curb the carb carvings.
I have always loved to cook, but these days I am having fun learning to cook healthier. DH has lost 20 lbs since I had surgery.
I get tons of ideas from Rachel Ray's 30 minute meals on the foot network.

I have used the La Tortilla for the Low Carb Superstore. 8 net carbs... it is okay BUT... It is much better when you make with regular Tortillas (around 24 carbs per tortilla ) I usually can eat only 1 wedge so it works out to be about 6 carbs... 12 if you eat 2 wedges. I think it is worth the carbs, so I make with regular tortillas. I posted recipe with the low carb tortillas since everyone is eating low carb foods it is the 'smarter' choice.

got a question on the shrimp...I have a coupon for a buck or soo off 1 of the Margaritaville Shrimp and I want to try them but I am a very very very picky FROZEN meat person.
I only get the UNCOOKED frozen shrimp now and I like those....but sometimes I find frozen cooked shrimp chewy/tough.
How do these turn out???
Have you tried the other flavors? Do they taste ok plain?

I don't think you will be disappointed at all. I am just as picky when it comes to frozen meats, especially seafood. In fact, I am not much of a shrimp eater because if they are not cooked just right, I don't like them at all. The great news is that the Margaritaville Jammin Jerk shrimp are NOT precooked. Just preseasoned. I was very surprised at the quality of the shrimp and at how large they were. I have bought 3 or 4 boxes of the Jammin Jerk flavored and each box came out wonderful. They are very spicy so I hope you like spicy foods.
I did try the Island Lime and I did not care for the flavor too much, but the quality of the shrimp was just as good as the Jammin Jerk. My husband really liked the Island Lime flavor, so it obviously is just an individual preference.
I have not tried the Paradise ****tail shrimp. I did notice that they are precooked, but I was so impressed with the quality of the others that I would bet they are very good as well.
