Thanksgiving Ideas?

Any good ideas for a healthy Thanksgiving? I found a way to make SF cranberry sauce. Here's the recipe that seemed the easiest: 12 oz. bag of fresh cranberries, 1 c. Splenda, 1 c. water, 1/4 tsp. salt. Stir them up, bring to a boil on med-high heat, cook 5-10 minutes until it's the consistently that you like. You can add nutmeg, cinnamon, or orange chunks for variety, if you want. If you like it thicker, try arrowroot. Arrowroot is a low carb way to thicken something instead of cornstarch or flour. If you like the sauce smooth instead of the whole-berry variety, you can put it in the food processor for a few seconds. Have you found any ways to alter the traditional recipes to be wls friendly? One of my WLS buddies gave out this recipe, he said it was really good he and his daughter concoted it. Sugar Free Pumpkin Fluff Pie 1/2 - 16 oz can Pumpkin 1 3/4 C Skim Milk or Lactaid 1/2 tsp Cinnamon 1/4 tsp Ginger 1/8 tsp Cloves 1 Pkg- San Sucre French Vanilla Mousse 3/4 C Sugar Free Cool Whip 1- Reduced Fat Graham Cracker Ready Crust 1 Pkg - Sugar Free Instant Butterscotch Pudding In bowl one; Mix the San Sucre French Vanilla Mousse 3/4 cups very cold skim milk as per instructions on the package. Fold in thawed Sugar Free Cool Whip. Inbowl two; mix 1 cup skim milk with pudding mix. Beat 1 minute. Stir in pumpkin and spices. Combine both bowls. Spread evenly in pie crust and refridgerate for 4 hours. I think it sounds really good so I'm taking it to Thanksgiving dinner. Deb

Sounds great! What the heck is San Sucre French Vanilla Mousse? I don't believe I've ever seen that. Here's another similar pumpkin recipe: 2 small boxes of SF vanilla instant pudding 2 cups milk (I used soy milk to save on the sugar carbs) 2 cups canned pumpkin (plain) 1 1/4 tsp. pumpkin pie spice Blend with a wire wisk. Pour into a cooked pie shell or serve as a pudding. Chill. Serves 8. 178 cal., 4 gm protein, 23 carbs.

Wanda and Deb, If you want to bump up the protein in either of these recipes, add a couple of scoops vanilla protein powder to the pudding as you make that part. You won't even know it is there but it adds the nutrition we need. I did something like this last year when I was on soft food. It was yummy! Layer the pudding and pumpkin with sf cool whip for a fabulous parfait (sp)

I do have unflavored protein. I'll give that a try. Should I add more milk to compensate for the extra dry ingredient? Wanda

I didn't add any extra. Just make the pudding part as the directions on the box call for and add a couple scoops of protein. I used vanilla but if your unflavored doesn't have a yucky aftertaste, go for it. I love to add protein in places we don't expect. Makes the naughty things, not so bad. Val

I wish i was inspired to research and have a yummy Thanksgiving. But alas, I will be drinking my Thanksgiving again this year, *sigh*. I hope you all save your favorite recipes because I'll be ready for a GOOD Thanksgiving meal next year!

I'm not sure that the rest of our friends know that you will be back in surgery for your revision the day before Thanksgiving! That's certainly not the traditional Thanksgiving but, it is something to be thankful for! Are you having a full revision or a partial revision? Can they ever really put everything back exactly the way it was initially? You've been through a lot this year. I hope by 2008, you are healthier and have all this behind you so you can start the year out right! Wanda
