As my husband would say..."It's so good, it will make you want to slap your mama!". He is from Louisianna--and sometimes it shows. I drizzled olive oil across talapia, added finely chopped tomatoes and portabella mushrooms, and sprinkled it with bay seasonings. A beautiful and healthy meal. Good stuff.

Make sure your oven is at 400, then bake till it's flaky. Probably about 15-20 minutes. Have you tried the blackened salmon filets at Sams Club? They are so awesome. Even DH loves them and he doesn't usually like healthy food! I could eat them several times a week and not get tired of them. Actually, I DO eat them several times a week.
