Topic: No Excuse Exercise Challenge W2D3
Goals: 5 days/week for at least 25 minutes
**Progress**
2/6: Break due to injury
2/7: 25 minutes of strength training
I'm going to apologize right now, because I haven't been as encouraging as I was last week. This is a CRAZY week for me and I just come online for a few minutes and then I'm off again. I hope you all are doing well.

STUFFED CHICKEN BREASTS
4 -4 oz. boneless skinless chicken breasts - remove any fat.
1-13 oz. can whole leaf spinach well drained ( squeeze out excess water)
8 Tbsp. sun dried tomato spread
4 slices f. f. cheddar cheese
4 slices f. f. Swiss cheese
1- 14 oz can vegetable broth (ready to serve)
2 Tbsp roasted minced garlic
4-5 green onions (chopped fine)
Pour broth in a sauce pan. Add chopped green onions, and roasted garlic. Simmer over low heat stirring occasionally.
While broth is simmering: Pound chicken breast until they're thin, but not mush. Top each pounded chicken breast with 1 oz. (1/8 C.) spinach, spread it out to cover most of the breast. Add 2 tbsp. of sun dried tomato spread, on top of the spinach. Top with 1 slice of each kind of cheese. Roll up the stuffed chicken breasts, and place in baking dish. Pour broth over chicken breasts.
Loosely cover with foil. Place in oven at 325* for 20 -30 minutes until done. Enjoy.

1 breast made 3 meals for me.
I was playing in the kitchen. It's a winner this time.
Topic: RE: Has anyone tried salads?
I was terrified to eat salad at first. I just wasn't sure how all of that stuff would chew up or down (whichever way you look at it). I finally gave in and had a couple of bites at a dinner party where it was the first dish served. I have found that the crunchier the better. The hunks of crunchy lettuce, cuccumbers, cabbage, carrots, etc. seem to chew up better. The softer, leafier lettuce just takes a lot longer to chew. I have had several salads now and they go down fine. I like to soak mine in some dressing though, which probably isn't the greatest- but I do look for fat free, low sugar dressings like ranch and honey mustard. I haven't tried onions though, since I never liked them anyway... I love a Wendys side salad drenched in chili
Good luck and let us know how it turns out.

Topic: RE: Stalled
Amy;
I shipped off two large boxes of clothes to an OH member in Maine last week, but I do still have a few things in 18/20. If you're interested, I'll send them for just the cost of shipping.
Email me if you'd like them and I can send you a list of what I've got.

Angel;
I've tried a bite or two of salad on a several occasions and have only kept it down once. Beware of dressing - for me, I think that's more the problem than the actual salad. I've tried vinagrette and fat free ranch and had problems with both.
Let me know how you do. I'm a little skitish to try again, so someone else's good experience may give me the confidence I need to try again.
Blessings,
Jennifer

Angel
Once again, every surgeon is different has different requirements. I have been able to have salads and raw veggies since 7 weeks post-op. I have had no problems at all with anything I have consumed except chicken (every pouch is different-LOL). Whatever you decide, I would take it slow and chew really well (of course). Raw veggies have been known to give some of us post-ops excessive gas and loose stools. As in everything else with this WL journey, it's kinda trial and error...ya know

Hi Angel. My Dr. will let me try salads now but I am a little scared so I haven't yet. Have you tried onions in anything else? I have had cooked onions in 2 different dishes and that so far has been the only thing that has upset my stomach. My suggestion is to try it at home first when you don't have anything planned that way if it does upset your stomach then you won't be changing your plans.

Topic: Has anyone tried salads?
HELLO
I was wondering if anyone has tried iceburg lettuce salads yet? I am going to subway fri night and was wondering what I could eat there. I am craving a salad with onions and fatfree ranch dressing. What do you think I know we are to wait for 6 months. Has anyone tried it?
THANK YOU
Angel
Topic: RE: No Excuse Exercise Challenge W2D2
I finally made it to the gym tonight for a 1/2 hour on the treadmill.
I got fed up today with how things are going. I've only lost 1 lb. in the last two weeks and every night lately, I've had other obligations that have kept me from taking care of me. I got REALLY upset about it today and cancelled every after work commitment on my calendar for next week so I could focus on me.
So, 8 days into the No Excuse Exercise Challenge, I finally took the first step towards my week 1 goal.
Blessings to you all,
Jennifer
