Ahhh my post deleted the rest of my instructions.... CONT........... Brown beef and onion and drain. Add taco and HVR seasoning. Put the browned beef in a pot and add the tomatoes & beans. Mix everything together and cook on low... the longer it's simmered the better *** I highly reccomend putting it in a crock pot and slow cooking. make the meat mixture, put it in the crock pot, add everything else... mix, and slow cook 8-10 hours. I would make it Friday night, and cook overnight so I could eat it all weekend LOL - I often use 2 cans of Rotels instead of a can of diced tomatoes. I find the original recipe wasn't spicy enough so I use 2 cans of HOT rotels. However make it as spicy as you want. I also normally add a can or water to make it a little less chili like, and more soupy.

i have fibro too.. so my excercise is limited. i swim 3-4x weekly (just started recently) and today i rode a bike ( a real one, not a gym one) for the first time in 10 years. i was blessed that i was a light weight to begin with, but the fibro makes excercise so hard to do. being in pain for 2 weeks after working out too hard is no motivation either. good luck with it. miranda

Do you have any idea about serving size / nutrition info on this? It sounds so good and I really do want to try it but I am trying very hard to keep track of what I am consuming (prot, cal, etc). Thanks for all of the great recipes. You really should put together a cookbook. Even if it's just in an electronic form you could really make out. I'd buy it! Monica

I LOVE this soup and eat it all the time. I make it with ground turkey, two cans of diced tomatoes, plus the can of rotel and 2 packets of the taco seasoning. I drain and rinse the beans only. It makes about 15 cups of soup. Without the calories for the HVR packet, I got the following nutrional information when I plugged it into a recipe calculator: serving size = 1 cup (for regular ppl, not us right now) calories: 252 Total fat: 7 g sat fat: 2 g Cholesterol: 48 mg Sodium: 777mg Total Carb: 33g Fiber: 8 g Sugars: 4 g Protein: 18 g Vit A: 10% Vit C: 28% Calcium: 7% Iron: 20% 49% Carbs 23% Fats 28% Protein
