8 weeks and food gets stuck
My only suggestions would be to make sure you are eating moist, loose meat until you can handle it. Make sure you CHEW VERY WELL- till it's applesauce consistency and make sure you take very petite bites. With the type of food items you list as eating you may be getting what my doctor refers to as a 'soft pouch'? That means only eating soft foods then your new stomach will only tolerate soft foods. My doctor told me my stomach needs to 'work out' or it will end up being a 'soft pouch' kinda like a couch potato- He he!
Perhaps you should try some refried beans, string cheese, chicken vegatable soup (though the chicken may be tough to chew depends on soup), etc. first to get your stomach away from the 'soft' foods- then the following week you can re-try meat again.
I'm not sure what food restrictions your doctor has you on, so you may be right on track according to his/her specifications. For me, after 3 weeks I was allowed to eat loose meat (like in chili, etc) and now I can handle most solid forms of meat (as long as its very moist and tender). Try fish- like tuna salad- as it may be softer for you
I would suggest talking to your doc about your food issues and see what he/she has to say. They may want you to eat/not eat specific items at this time or they may need to do followup tests, etc.
Good luck!

to see if I have a stricture and/or and ulcer. I was surprised that my surgeon wanted me to be scoped, because I had a complication and now have a fistula and it can get messed with during the EGD. I had an appt with the GI dr that is doing the scope tomorrow and he even said the fistula could be messed with, but he doesn't think it will. I was convinced for a while that I was eating too much too quickly and not small enough bites. I am still not convinced that I don't just have an intolerance, but the scope is a easy way to check and correct if something is wrong like a small stricture. I didn't think it could be that b/c I am fine with soft food and even some lunch meat, but he wants to check. I am not saying that is what you need, but you should mention your concerns to your surgeon or nurse so that they can steer you in what they think is the right direction. I will post what my EGD findings are so that you can compare notes. We seem to have the same problem.
