1 Latke??!!!!
Well, I thought I would give us a treat today since we missed Hanukah because I was still on liquids... and I made homemade latkes! YUM! But guess what.....after only 1 I was full!!!!! This is amazing....granted I had applesauce and a small dab of lo fat sour cream... but jeeesh!!!
This surgery is amazing... my refrigerator is filling up on all the leftovers!!!

had a bite of brisket during Hanukkah! Unfortunately for me, I ended up getting sick, but it is because I get the full feeling after I have eaten and I have not yet figured out the amounts that set me off!

Zucchini Latkes
1 medium-small zucchini (about 6 inches long), washed, with ends cut off
1 large egg (or 1 medium egg w/ 1/2 eggshell full of water)
1/4 tsp. garlic powder (not salt!)
1 tsp. Krusteaz CarbSimple Pancake mix (if you don't count carbs you could use your favorite pancake mix)
1 tsp. Low-carb or whole wheat bread crumbs
1 tsp. Kraft Grated Parmesan cheese (the dried stuff - I don't recommend fresh for this, but you 'could')
1/8 tsp. pepper
1/8 tsp. salt
2 tablespoons unsalted, sweet cream butter, melted
Grate zucchini with skin into a shallow bowl. Sprinkle with the 1/8 tsp. salt and set aside.
In a bowl beat together remaining ingredients until well incorporated. Squeeze excess water from the zucchini and add it to the egg mixture. Mix well. This should be thick.
Heat non-stick skillet over medium heat. Add melted butter. Yes, I know this seems like a lot of butter, but latkes are traditionally almost deep fried, so this is actually little butter You 'can' substitute up to 1/2 the butter with Extra Virgin Olive Oil.
Divide batter in half and drop into skillet creating patties. I use a spoon to kind of push the edges up tight to form 2 nice pancake-like circles. Cook for 3 to 5 minutes per side until golden. Remove to a paper towel to drain. Serve hot!
This is also good with shredded fresh parmesan or mozzarella sprinkled on top, but certainly not necessary.
