Thought a new recipe would spice things up!
This is a new one I tried yesterday. I found it on Recipe Resource.
1 tsp. curry
1 lg. delicious apple cored, peeled and chopped
1 lg. yellow onion
1 tbsp. lemon juice
4 oz. mushrooms sliced
1 tsp. chicken bouillon
2 C apple juice
3 1/2 pounds skinned chicken thighs
1 tbsp. flour
Place curry powder in a wide frying pan and stir over med. heat until slightly darker, about 3-4 min. Add apples, yellow onion, lemon juice, mushrooms, bouillon, and 1/2 cups apple juice. Bring to a boil.
Rinse chicken and add to pan. Reduce heat, cover and simmer until meat near bone is no longer pink, about 30 min. Remove chicken and keep warm.
Blend flour and 1/2 cup apple juice. Gradually add to pan. Increase heat to high, and stir until thickened. Pour over chicken.
I added 1/2 of a yellow pepper, because I needed to use it up. I also added about a tsp. of chopped fresh rosemary. I love rosemary on chicken. Its pretty good. A little something different.
