Roast Pork with Apricot Sauce We had this over the weekend and OMG to die for!!! 2 1/2 pounds boneless pork loin ( I used 2 pork tenderloins ) 2 tablespoons olive oil 1/3 cup chopped onion 3/4 cup chicken broth 1/4 cup apricot preserves (low sugar) 1 tablespoon balsamic vinegar 1 tablespoon lemon juice 1 tablespoon splenda Guar or xanthan ( I used cornstarch ) In a big, heavy skillet, brown pork then transfer to your slow cooker In a bowl mix together all ingredients except guar or xanthan or cornstarch. Pour mixture over pork, cover and turn to low. Cook for 7 hours. When time is up remove pork to serving platter. Season juices with salt and pepper to taste and then thicken. EAT! 6 servings 338 calories 17 G fat 40 G protein 5 G carbs 0 G fiber Only thing I would add to this recipe is some spice. It was REALLY good but would have been awesome with a bit of red pepper flake. ----------------------------------------------------- Crock Pot Chicken.. Found this on the web cant remember the name of it.. INGREDIENTS * 1 (3 pound) whole chicken, skin removed (I didn't remove the skin) * 1/2 cup chicken broth * 1/3 cup soy sauce * 1/3 cup olive oil * 1/4 cup honey (I left this out) * 1 teaspoon Worcestershire sauce * 2 teaspoons balsamic vinegar * 2 teaspoons lemon juice * 1 teaspoon sesame oil * 2 tablespoons minced garlic ** I had some fresh Ginger so I threw some of that in whole too for flavor. DIRECTIONS 1. Remove skin from chicken, and empty inner cavity of contents within. Pat chicken dry with a paper towel, and place inside the slow cooker. 2. In a bowl, stir together the chicken broth, soy sauce, olive oil, honey, Worcestershire sauce, balsamic vinegar, lemon juice, sesame oil, and minced garlic. Pour mixture over chicken, and cover. 3. Cook chicken on low setting for 8 hours, or 4 hours on high setting. =0)
