looking for a recipe
the way i make mine is i use a jar of the randall white beans ready to eat and dump them in a kettle with some chopped onions and carrots for color and add some diced ham and a jar of water add salt and pepper to taste and cook til the carrots are tender and then serve. i am not a cook but it sure does taste good to me and hubby!!
I use dry beans and do the quick soak method on the bag (bring beans to a boil, turn off heat and cover for one hour).
After soaking, I rinse the beans and place in a pot with onions, carrots and ham. You can buy a ham with the bone in it. I don't know why, but it tastes better when the bone was cooked in the soup. Add enough water to cover ingredients by at least 3 inches. I add some salt and pepper. Bring to a boil and lower the heat to low and simmer for at least two hours. I usually try to pull the remaining ham off the bone and remove the bone. If you like your soup a little thicker, you can mash the beans by using a masher, or take some of the beans out and blend in the blender. You will know if it's cooked long enough based on the firmness of the beans. I like mine mushy. You may prefer them to be more firm.
It's really not as complicated as it sounds and it's so yummy! I usually make a pot every weekend and we eat it all week.
