Crock Pot : Beef w/ Asian Mushroom Sauce
Ok Hubby voted so he wins.. This is kind of Thai though cuz it has a peanut sauce...
Beef with Asian Mushroom Sauce
4 ounces sliced mushrooms
4 pounds beef tip roast ( I used chuck )
1/4 cup Hoisin Sauce ( See recipe at bottom )
2 cloves garlic, minced
1/2 teaspoon salt
1/4 cup beef broth
Guar or xanthan ( I used corn starch - cant find the other ones )
6 tablespoons sliced scallions
Put the mushrooms in your slow cooker and place the beef on top. Spread the Hoisin Sauce over the beef, scatter the garlic and salt over it, and pour the broth around it. Cover the slow cooker, set it to low and let it cook for 9 hours.
When the time's up, remove the beef from the slow cooker and put it on a platter. Add guar or xanthan to thicken up the sauce a bit and then pour the sauce into a sauce boat. Slice the beef and serve it with the sauce, topped with the scallions.

Hoisin Sauce Recipe:
4 tablespoons soy sauce
2 tablespoons natural peanut butter
2 tablespoons splenda
2 teaspoons white vinegar
1 clove garlic
2 teaspoons dark sesame oil
1/8 teaspoon five spice powder ( left this out couldn't find it )
Just assemble everything in your blender and blend till its smooth. Store it in a tightly lidded jar in the fridge.
Yield:
Makes roughly 1/3 cup, or 6 1 tablespoon servings

I added zucchini to this also since I had it and needed to use it up.
I just put it all in the crock pot so I have no idea how it tastes. Will let you know tonight if it was good or not. Sure sounds good. Smells good to!! I think this would be great with Chicken or Pork also. Maybe even some fish..

I have been lurking around on the board for awhile now. I have seen two very yummy looking recipes you have posted. I printed them to see if I could talk my husband into trying them. He does not like the crock pot meals, cause he says everything tastes the same?? I dont think so, but maybe with some of these recipes I can get him to try it again. Can I ask where you find these recipes? Or do you make them up as you go? How have you been? I saw in a past post you hit your -100 pound mark. That is very exciting. I wish I could get there. I have been stalled for about 3-4 weeks now. I am trying to talk my husband into letting me get on of those gazelle machines. Do you still like yours? I am just not into doing any excersice in the public. I feel like people stare at me...I know it is my own insecurity, but I cant get past it.
Hope you are doing well. I plan to stop lurking on this board and get to know some people again. I have been gone for some time now.
