Thai Pork Lettuce Wraps
Start to finish: 30 mins
Makes: 4 servings
1 pounds ground pork
1 medium zucchini, cut into bite size strips
1/2 cup finely chopped red sweet pepper
1/4 cup chopped green onions ( 2 )
1/8 to 1/4 teaspoon crushed red pepper
8 leaves butterhead lettuce
Peanut Sauce ( see below )
1. In a large skillet cook por****il brown. Drain fat. Stir in zucchini, sweet pepper, green onions and if desired crushed red pepper. Cook and stir for 2 to 3 minutes or until mixture is heated through. Remove from heat. Stir in half of the peanut sauce.
2. To assemble. Divide pork mixture amount lettuce leaves. Drizzle with remaining Peanut Sauce. Roll up. EAT!
Peanut Sauce : In a small saucepan whisk together 1/3 cup natural peanut butter; 1/3 cup water; 3 tablespoons soy sauce; 2 cloves garlic, minced; and 1/4 teaspoon ground ginger. Cook over medium heat until heated through, whisking constantly. Stir in 1 tablespoon of fresh cilantro.

This recipe can be changed up a 1000 different ways. I have added all types of veggies to this. etc.. Its simply awesome. I do add 1 packet of splenda to my peanut sauce as I feel it needed to have a sweet tone to balance out the soy sauce.
