Thai Pork Lettuce Wraps

Start to finish: 30 mins Makes: 4 servings 1 pounds ground pork 1 medium zucchini, cut into bite size strips 1/2 cup finely chopped red sweet pepper 1/4 cup chopped green onions ( 2 ) 1/8 to 1/4 teaspoon crushed red pepper 8 leaves butterhead lettuce Peanut Sauce ( see below ) 1. In a large skillet cook por****il brown. Drain fat. Stir in zucchini, sweet pepper, green onions and if desired crushed red pepper. Cook and stir for 2 to 3 minutes or until mixture is heated through. Remove from heat. Stir in half of the peanut sauce. 2. To assemble. Divide pork mixture amount lettuce leaves. Drizzle with remaining Peanut Sauce. Roll up. EAT! Peanut Sauce : In a small saucepan whisk together 1/3 cup natural peanut butter; 1/3 cup water; 3 tablespoons soy sauce; 2 cloves garlic, minced; and 1/4 teaspoon ground ginger. Cook over medium heat until heated through, whisking constantly. Stir in 1 tablespoon of fresh cilantro. Nutrion Facts Per Serving: 297 calories 19 g Fat ( 5 gram sat fat ) 53 mg chol 818 mg sodium 8 g carbs 2 g fiber 22 g protein This recipe can be changed up a 1000 different ways. I have added all types of veggies to this. etc.. Its simply awesome. I do add 1 packet of splenda to my peanut sauce as I feel it needed to have a sweet tone to balance out the soy sauce. OK all I have to say is YUMO!!!!!!!!!!!!!!!!!!!!!!!!! I LOVE LOVE LOVE lettuce wraps from chilis so this is just what I have been craving. A great thing to try while hubby is gone. Looks easy and not too much of it! YAY!!!! xoxo, Melissa

Boy does that sound delicious. I have always wondered how to make a Peanut Sauce. And what is butterhead lettuce? Is it like iceberg? I have not seen it before. Maybe it is local thing for you ? Who knows. Thanks for sharing the recipe with us....Gay
