Zesty Barbecued Chicken
OK this one is much tamer then the other one lolol. So I thought I would post it for grouchy pouchies *grin*.
Zesty Barbecued Chicken
Prep: 10 mins
Marinate: 1 hour
Grill: 12 mins
Makes: 4 servings
1/4 cup cooking oil
1/4 cup lime juice
1/4 cup water
2 tablespoons finely chopped onion
2 teaspoons dried tarragon, crushed
3/4 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon bottled hot pepper sauce
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
4 skinless, boneless chicken breast halves
1. For marinade, in a screw top jar combine oil, lime juice, water, onion, tarragon, salt, ginger, pepper sauce, garlic powder and black pepper. Cover and shake well.
2. Place chicken in self sealing plastic bag set in a shallow dish. Pour marinade over chicken; close bag. Marinate in the refrigerator for 1 to 2 hours, turning bag occasionally.
3. Drain chicken, reserving marinade. Grill chicken 12 to 15 minutes or until chicken is no longer pink, turning once and brushing with marinade halfway through grilling. Discard marinade.

My Twist:
I use chicken thighs instead of breasts. MUCH more tender and stays moist even when reheated. Also I use what ever spices that sound good that day. Since they are all dried just put in your favorites. Lastly I use my new indoor grill to make this but if you don't have an indoor or outdoor grill just broil it. Works the same way. Just keep an eye on it.
Broiler pan trick. I have one some where but hate to use it or clean it. So I took an old cookie cooling rack and placed it into a old cookie sheet and wa la made my own. SO much easier to clean especially if you wrap the cookie sheet in foil. This is a GREAT way to cook bacon also. Just bake it!

This sounds way good!!! Cutting out hot pepper sauce though. (sorry grouchy pouchie...lol) I might have to try this out this weekend. I have a few new recipes that I am trying out soon. Tried one out last night (bleeck!!!) Hubby and oldest son loved the fish I ate 1/2 of a 2 oz piece and had to throw the rest away.
