Satisfying a craving
I LOVE BUFFALO WINGS.
I went to college not far from Buffalo and often frequented the "Anchor Bar" which is the bar where wings were first created (well, not the wings, but buffalo wings). Ever since then they have been my favorite food.
Since October I have managed to control my desire to sink my teeth into some good wings...that was until the boy ate some last week (brought home from a lunch meeting). Then the craving hit.
I ignored the craving, mostly because I wasn't feeling well and didn't feel like eating anyway. Until last night. I left work and headed off into my evening routine, one lesson (which was shortened due to the students birthday) and a quick workout at the gym and next thing I knew, it was only 7 o'clock! I'm never done that early.
The craving for those wings was a raging big time by that point. It would have been so easy to pop into any pizza shop and order some but....I came up with an idea and hit the grocery store intead.
I purchased some boneless, skinless chicken breast tenders, a bottle of Franks (the only authentic brand as that is what they use at the Anchor Bar) Wing sauce (no sugar, low fat too!), and the lightest of the light blue cheese dressings.
I also got groceries for the weekend, as that is when I typically cook.
At home I put a tiny bit of EVOO in a pan (less than a 1/2 turn around the pan) and heated it up. I salted and peppered the tenders and when the oil was hot I tossed them in. I browned them on both sides then poured wing sauce over them and turned them occasionally until they were well coated and cooked through.
I pulled them out of the pan and transferred them to a cutting board. Once they cooled I took a knife and fork and shredded them up into tiny pieces. I mixed them with a bit of fat free mayo and a small amount of the light dressing and had....
Buffalo "wing" chicken salad.
OMG....YUMO! It made plenty - so the boy has some for lunches and dinners for the next couple of days (well - at least today), and I have some for lunch today and tomorrow as well.
I've learned, don't fight the craving, find away to satisfy it, in a wls friendly and healthy way!
We love stew...and chili....and bean soup... All those cold weather/feel better dishes. I am going smelling the stew cooking in the crock pot right now. I just wanna get a bowl of it and have for lunch. But, I'm going to let it continue cooking and have some for dinner instead. I'm thinking chili from Wendy's for lunch....or something from the mexican restaurant..... who knows. I'm not really hungry, but I've only had fluids all morning long and I need to eat, so I'm thinking about food. lol
