Rotel, for those who need/want to know
Okay, just in case you guys missed Felicia's post on my post about the YUMMY Taco Soup, this link has a picture of Rotel....Rotel is actually the brand name for these tomatoes with green chilis. It's something that everyone knows and uses down here in TX so we forget and just refer to it by the brand name....sort of like saying Kleenex instead of tissues. LOL

OH....and just so you know, if you can find this at the grocery store, it should NOT cost $2 a can. At our grocery it's under $1.

Most stores carry a generic brand and it taste just as good, but if you can't find them, just mix with one can of diced tomatoes, one can of green chillies and if you want it spicey, add a few jalepenos. You can also add a little red pepper flakes to increase the heat. Yummy with chicken or cheese or beans or even in your soups.
I agree. I usually buy our store brand - when it's in stock. Everyone else apparently buys it too. And, when they've been out of both or if I wanted just a little bit more than is in the premixed can....I buy the separates and mix them as you said.
Great idea on adding jalapenos and/or red pepper flakes to make it spicier and bring up the heat.

I've heard people say they still eat this for a snack - of course, not nearly as much. I use the 2% velveeta now for casseroles, etc. and I haven't had any problems with it. Might work for the dip. Oh...and Tostitos makes a multigrain chip that is really good...and if you only eat half a serving, it's not too bad on fat and carbs - calories either.
Of course, I wouldn't eat this every day, but for a party, etc., it's an alternative.
