YUMMY TACO SOUP RECIPE

Hey all!! I got this recipe from my state board. I made it today and just tried a bite. Oh my GRAVY it is DELISH!!!!! (sorry, watched RR today. ) Here it is if anyone is interested. Taco Soup 1 lb. lean ground beef (could use ground turkey) 2 cans Rotel 1 can pinto beans 1 can Ranch style beans 1 pkg. Taco Seasoning 1 pkg Ranch Dressing mix 1 can corn (drained) 1 can water 1 can cream style corn (optional - I didn't use it because my kids won't eat it) 1 large onion, minced Several cloves of garlic, minced (I have the jar of minced garlic and used a big spoon of it instead of mincing it myself) Brown the meat, then add onions and garlic. Coo****il the onions are clear. Add the Rotel, all the beans, corn and water. Slowly stir in the taco seasoning and ranch dressing mix. Simmer 45 minutes. My tiny twist - I browned the meat, then put in the onions and garlic. Meanwhile, I dumped everything else (except the seasonings) into my big crock pot so it could start warming. Then, I dumped in the meat mixture, stirred it together, then added the seasoning packets. After that, I just let the crock pot do the work for me. Didn't need to add anything to it or make any changes other than leaving out the cream corn - my kids HATE cream style corn. Oh, I also bought the mild Rotel instead of the regular as my kids don't like things *too* spicy. I think I'll serve it with cheese and tortilla chips. If hubby was home tonight, I'd make cornmeal muffins to go with it too. Add a salad and it's a yummy nutritious meal. I don't have the numbers on it yet, but I've asked if anyone on the other board has them. When I get them, I'll post those too. If you try it, let me know how you like it!! Susan

OK...SO I AM NOT A COOK NOR DO I PLAY ONE ON TV....WHAT IS ROTEL??? THIS SOUNDS REALLY GOOD BUT I HAVE NO CLUE WHAT ROTEL IS.... THANKS SO MUCH!! HUGS JUDY

LOL Judy. Sorry about the Ro-tel. It's a brand name of canned diced tomatoes with green peppers. You probably know it as the can of "stuff" you add to Velveeta (and sometimes ground beef) to make dip. Or, maybe it's just a Southern thing.....not sure. OH....if you can't find the Ro-tel brand or other brand of the same type thing, you can always use cans of diced tomatoes and then buy a can of diced peppers. Hope this helps!! The soup was super scrumptious.... the kids went back for seconds!!! Susan
