Today's Recipe: Eggs...

Ok so I have trouble with eggs plain but not much trouble with them in something so I thought I would share an Egg recipe today: Spinach Omelet with Red pepper Relish 1/3 cup chopped red sweet peppers 1 tablespoon finely chopped onion 1 1/2 teaspoon cider vinegar 1/8 teaspoon black pepper 4 eggs Dash salt Dash cayenne pepper 2 tablespoons butter 1/4 cup shredded sharp cheddar cheese ( 1 ounce ) 1 tablespoon snipped fresh chives or flat leaf parsley 1 cup spinach leaves 1. For red pepper relish, in a small bowl combine sweet pepper, onion, vinegar and black pepper. Set aside. 2. In a large bowl combine eggs, salt and cayenne pepper. Beat with a for****il combined. Heat a 10 inch nonstick skillet with flared sides over medium high heat until skillet is hot. 3. Add butter to skillet. When butter melts, add egg mixture to skillet; lower heat to medium. Stir egg mixture gently but continuously with a spatula until mixture resembles small pieces of cooked eggs surrounded by liquid egg. Stop Stirring. Cook 30 to 60 seconds more or until egg mixture is set but shiny. 4. Sprinkle with cheese and chives. Top with 3/4 cup of the spinach and 2 tablespoons of the relish. Life and fold an edge of omelet about a third of the way towards the center. Remove from heat. Fold the opposite edge towards the center. Top with remaining spinach and remaining relish. Cut the omelet in half and transfer to warm plate. Start to finish: 20 minutes Makes: 2 servings Nutrition facts per serving: 325 calories 27 g fat ( 12 g sat fat ) 470 mg chol 397 mg sodium 4 g carb 1 g fiber 17 g protein My Twist: OK I find Omelets way to much work ( I am a lazy cook ) so this is how I made it... I put all the veggies ( pepper, onion, spinach ) into a pan and cooked them. Then I beat up the eggs as it told above and poured it over the cooked veggies. Let it cook till firm, Flipped it over to cook the other side and plop on a plate. I topped with fresh chives and parsley. YUMO! I also have added bacon or sausage or ham to this for extra protein. YUMMO!! ENJOY!! *huggles* Felicia
