Not zuchinni fries but......

I make squash fries all the time, it is one of my standby's, and easy to do. Slice a butternut squash in half. Scoop out the seeds. This is a little difficult, you have to get enough of the meat to get all the strings out. Peel the squash, i use a potatoe peeler. Spray a baking sheet with Pam. Slice the fries to the size you like, i dont usually have a perfect "fry" shape. I have found about 1/4 inch thick to be a good thickness for even baking. Lay them out in a single layer on the baking sheet. Season to your taste, salt and pepper if thats what you like. I use season salt. Place in preheated oven of 425 degrees. Bake about a total of 20 mins, or a little more. Jus****ch them closely. When browned on one side, turn them over to brown on the other side. They are really very sweet. I make a batch up, then put in fridge. When I am packing my lunch or making dinner, I pull a few out at a time. I have often thought, when they come out fresh, they would be good for movie watching. Nice satisfying crispy texture. They do tend to have a softer texture when stored. But, the flavor is still sweet. Lauri
