Does anyone have a Zucchini Fries recipe they can share?

I'm going to attempt to fool my 7 yr old son into thinking that he's eating homemade french fries, and I was wondering if any of you had a recipe that kids are sure to love. I found this one, but what do y'all think? Zucchini Oven "Fries" 5 zucchini 1 egg white 2/3 cup of flour 1 tbsp cornstarch 1/2 tsp salt 1/2 tsp garlic powder cooking spray 1. Preheat oven to 400 degrees 2. Lightly coat baking sheet with cooking spray 3. Trim zucchini and cut in half lengthwise, then slice into 1/4 inch wide sticks resembling french fries. 4. Beat egg white with electric mixer until soft peaks form 5. Add zucchini sticks, tossing to evenly coat. 6. In paper bag, thoroughly shake flour, cornstarch, salt, and garlic powder until combined. 7. Drop in the zucchini sticks, 5 or so at a time, and shake gently to coat. 8. Place all on baking sheet, spray lightly with cooking spray and bake 12-15 min or until golden brown. Makes 4 servings Per Serving: Calories = 128, Total Fat = .7 g, Cholesterol = 0 mg, Sodium = 329 mg, Potassium = 681 mg, Total Carbohydrates = 26.3 g, Protein = 6.1 g Does anyone know how I can change it up to make it lower in carbs? I'm not that bright in the kitchen lol!! Thanks for your help!

I would exchange the white flour with soy flour and it will drop the carbs a ton plus I would dump the cornstarch. I would also use the whole egg not just the whites and throw in some shredded parm into the mix. But that is just how I would change it up. Let us know how it goes! Felicia =)

Those sounds really yummy. Let us know if they taste as good as they sound! I like the changes Felicia suggested. Plus, remember, what the recipe calls a serving is at least 2-3 times what you will actually be able to eat, so you won't be getting quite that many carbs when/if you eat them. Susan
