Today's Recipe : Shrimp & Feta
Shrimp & Feta
Prep: 30 mins
Marinate: 30 mins
Makes: 8 to 10 servings
1/2 cup bottled olive oil and vinegar salad dressing or Italian salad dressing
1 teaspoon finely shredded lime peel
3 pounds fresh or frozen large shrimp in shells, peeled, deveined and cooked
1/4 cup snipped fresh herbs, such as dill, cilantro and or parsley
1/4 cup feta cheese crumbled
salt and pepper to taste
Lime Wedges
1. In a self sealing plastic bag set in a shallow dish combine salad dressing and lime peel. Add shrimp; seal bag. Marinate in the frig for 30 mins to 4 hours, turning bag occasionally.
2. To serve, combine undrained shrimp, herbs and feta cheese. Stir gently to combine; season to taste with salt and pepper. Spoon into a bowl. Serve with lime wedges.

My Twist:
- I use the already shelled, precooked frozen shrimp.
- I use parsley and basil for the fresh herbs and I added dried dill.
- If you want to have this last over a couple of days I would mix up the dressing, herbs and cheese. Then in a small sandwich bag put in what you want to eat for that day and add some of the dressing. Can get super strong if all is mixed together and the left in the frig for a day or two.. This way you can have it all ready to go and just make and eat what you want. Great for putting together fast in the morning before work and then just toss in your work frig till food time.
- I also used lime juice instead of peel. BUT if you do this be sure you do not leave your shrimp in it to long as the acid in the lime juice will over cook your shrimp.
- Kraft makes an AWESOME Italian dressing to use for this. Its called Carb Well. I just bump it up with some balsamic cuz I like it a bit on the "bite" side.
