Pepperoni Cups - Recipe for the day!
A fun little treat!

Pepperoni Cups
4 oz. Cream cheese (softened)
½ cup mozzerella cheese (grated)
½ cup parmesan cheese (grated not powdered)
½ package frozen spinach, thawed and squeezed
2 tablespoons grated onion
¼ teaspoon garlic powder
1 package large pepperoni (approx. 24)
Mix filling and put a teaspoonful on each pepperoni, shaping into a cup and placing into a mini-muffin pan. Bake for 20 minutes at 350 degrees.
Makes 24 appetizers at less than 1 carb each.

I do ok with them. Have not had a problem...I just take really small bites and chew like there is no tomorrow. Everyone is different though. I was one who could not do chili from Wend'y ever and still can't so go figure. Only way to know is to try.
They are wonderful though. Hubby loves them!

Now Wendy's chili I've been able to eat forever! It was one of the things that helped me feel "normal" when nothing else could at first.
I guess I'll have to wait a bit on the pepperoni. Anytime I eat anything too spicy like that, I Just seems to be my luck. Oh well....
It's really really sad though because I LOVE spicy foods. All this bland stuff I've been eating makes me wanna
