Another question for you October chefs!

I am really really enjoying cooking. I usually work two days, and have two off. What I have been doing, is on one of my days off, I prepare several dishes, and divide them up to last through my work days. I find this really helps me stay on my "diet" (LOL) er...plan, with a little prep ahead of time. Soooo, anywho...hear is my question. I have a couple of recipes calling for fresh ginger. I have bought the ginger. Do you peel it? I need to finely grate it for a couple of recipes. Is there a special grater? I have one of those square metal grater deals, but it looks pretty cumbersome to get small the amount of ginger I need. Suggestions? Thanks everyone, you all are just the bomb! Oh by the way, you guys have been dictating my menus, as I have tried or in the process of trying all the recipes here! Thanks! Lauri

Yes, peel it. You can put some in a food processor to chop it finely. Next time, buy it already chopped. The sell it like they do already chopped garlic. Aime

Fresh Ginger ROCKS! OK what I do is break off what you need. Peel it with a spoon. Slice it in thin discs ( about the width of a quarter or thinner). Take my widest knife and lay it flat over the ginger disc and SMACK IT HARD! It will sma**** flat and mince/grate it all in one swipe! They do make a special ginger grater that actually isn't like any other grater. It has bumps but no holes for the stuff to go through lol. There is another one called a rasp ( I want one !!) that is VERY VERY FINE that you could use. OR if you have a box grater, cover the smallest smallest grate size side with 2 layers of plastic wrap and using circular motions grate your ginger. There is NOTHING better then fresh out of the peel ginger. No replacement in my opinion. I also peel it and slice it thin and pop it in a cup of warm tea. YUMO! And OMG If you have a tummy issue going on its awesome for that. Also helps with car sickness lol. Glad you are enjoying the recipes!! Cant wait to hear how the ginger goes. *huggles* Felicia =)

Forgot to say that if you have extra just pop the chuck thats left in the freezer. It keeps forever lol. *hugs* Felicia

Keep in mind, that fresh ginger, while delicious, is Very Strong! I just peel and chop, actually. Lisa
