Today's Recipe-Green Chili Souffle
OK so Felicia and I decided to take turns..this is one that is great protein and one that would be a great one for christmas morning! Or something to do with left over ham after Christmas. I hope you all enjoy.
Green Chili Souffle
from Fran McCullough ' The Low Carb Cookbook
Serves 6
2 tablespoons butter for the dish
4 (4-ounce) canw whole peeled chilis
8 ounces Muenster or jack cheese or a mixture, shredded
1/2 pound ham, finely diced
8 large eggs
1 pint heavy cream
1 teaspoon salt
1 teaspoon ground black pepper
Preheat oven to 350*F and butter a casserole with sloping sides or a souffle dish. Line the dish, bottom and sides, with the chilis (these will form a crust when the souffle is cooked). Make a layer of the cheese and then of the ham. Beat the eggs well in a bowl and add the cream, salt, and pepper. Mix well, then pour into the dish.
Bake the souffle for 40 minutes or uintil the top is golden brown and the center is cooked.

We have made a few adjustments over the years to this one for variation. This is the original recipe above. Sometimes we do chopped green chilis and throw is all together and bake it. Also we love to top with a dollop of sour cream and some picante! YUMO!!
