Chicken Alfredo Better Homes and Gardens Phase 1 Low Carb Cooking 6 medium skinless, boneless chicken breast halves Salt and Pepper 1 tablespoon cooking oil 1 cup whipping cream 4 ounces asiago or parmesan cheese, finely shredded ( 1 cup ) 1.3 cup drained roasted red sweet peppers, cut into thin strips 3 tablespoons finely shredded fresh basil 1. Sprinkle chicken with salt and pepper. In a 12 inch skillet brown chicken breasts in hot oil about 10 minutes, turning to brown evenly. Transger chicken to a 3 quart rectangular baking dish; set aside. 2. For sauce, in a medium saucepan beat whipping cream with a wire whisk or rotary beater for 1 to 2 minutes or until thickened. Heat over medium heat just until simmering. Reduce heat to medium-low. Gradually whisk in cheese until melted. 3. Pour sauce over chicken breasts in dish; top with sweet peppers. Bake, uncovered, in a 350 oven for 15 to 20 minutes or until the chicken is no longer pink. Sprinkle with basil. Prep: 25 mins Bake: 15 mins Makes: 6 servings Nutrition Facts Per Serving 418 cal 27 g total fat ( 15 g sat fat ) 162 mg chol 353 mg sodium 2 g carbs 0 g fiber 41 g protein My Twist: I used Chicken Thighs. I also did not whip the cream ( to lazy lol ) and just poured it in and let it boil for a bit and it will thicken. But on the flip side I didn't want it to thicken to much cuz thats what helps the chicken go down well. I would NOT freeze this recipe. Between the cream and the cheese ack no wont freeze well. I also put a touch of wine in the cream sauce as I love that flavor with chicken.

Cream, Cheese and Basil lolol you could pour that over a brick and I think it would taste good lmaooo Enjoy!!! Oh you could throw all types of veggies in this sauce to ( I would cook them first them add them though). YUM *huggles* Felicia =)

OK so I made this for dinner tonight. WOW it was great! Fred kept mmmmm ooooo my God this is so good! He said it is one of the best things I have ever made. Of course I can not really take credit for it as it is your recipe (which he knows) but he also said it was the best alfredo sauce that he has ever had and he used to get alfredo everywhere we went!! You hit a home run with this one. A small word of caution to later Octobers as I am that it is still a little rich. BUT man was it good. Fred ate way too much even! He said he would suffer all over again just to eat it!! Believe it or not!!!! I did only do 4 chicken breasts and actually cut them in half before I brownded them and baked them. I also added the wine like you suggested. Even though it was rich my pouch still liked it and it stayed down. Just that little feeling of wait hold on not to much of this kind yet sweetie. He is very nice to me sometimes LOL Thanks a bunch for this. Fred thanks you too! Hugs, Melissa
