Recipe - Individual Turkey Meat Loafs
OK this one is fun and it is one the whole family will love. It is actually out of a kids cookbook so I love the small portions. These are great to make up and then pop them in the freezer and just pull one out when you need it! I hope everyone enjoys!
Individual Turkey Meatloafs
3/4 cups ketchup
salt and pepper
2 pounds fround turkey (or you could use beef or chicken if you like)
1 med onion, finely chopped
2 slices bread (I use whole grain wheat) torn into small pieces
1 cup grated cheddar cheese
1/2 cup finaly chopped dill pickle
1 Tbs. worstershire sauce
1 large egg, beaten
2 garlic cloves, minced
2 tsp. dry mustard
1) Preheat oven to 350*. In large bowl mix 1/2 cup ketchup with 1 tsp salt and 1/2 tsp. pepper and the remaining ingredients until well combined. Divide mixture evenly among 6 cups of a standard 12 cup muffin tin (or what I do is make them a little smaller and then fill each cup, this makes then a little smaller and more portionate to what we eat) Gently compress and mound tops. Brush with remaining 1/4 cup ketchup.
2) Transfer tin to oven, bake until instant read thermometer inserted into center of little meat loaf reads 170* - @ 45 min.
3) Remove from oven and let rest 5 min or so before removing meat loafs to allow juices to stay in.

So one thing that I have not tried is instead of ketchup maybe using BBQ sauce. Now Fred and I do not dump at all on sugar but they make great SF ketchups and BBQ sauces. That might be yummy. Also since there are just two of us I actually have taken 1/2 the mixture and just put in the freezer and then take out and make when I want.

This sounds FANTASTIC. My family LOVES LOVES LOVES meatloaf of any kind!! I got to get my Dana Carpenter book back from my Mom (insert growl of irritation here) cuz that book has AMAZING meatloaf recipes it in.

It is really yummy. I freeze half of it for a later date and it works great. Since you have one normal eater in your house this is great for you too as you have someone to eat the leftovers. I used to have that but since we have both had WLS we eat so little now it is not even funny. Fred loves meatloaf. Oh and some times when it is coming out of the oven i sprinkle a little more cheese on top to melt for added protein.
