Today's Recipe : Shrimp Soup...

Tip for this : Liquid Beano if you are worried about the "side effects" of bok choy. Shrimp & Greens Soup 12 ounces peeled and deveined fresh or frozen shrimp 1 large leek, sliced 2 cloves of garlic, minced 1 tablespoon olive oil 3 14 ounce cans reduced sodium chicken broth or vegetable broth 1 tablespoon fresh snipped flat leaf parsley 1 tablespoon fresh snipped marjoram or thyme 1/4 teaspoon lemon pepper seasoning 2 cups shredded bok choy or spinach leaves 1. Thaw shrimp, if frozen. 2. In a large saucepan cook leek and garlic in hot oil over medium heat until leek is tender. Carefully add broth, parsley, marjoram, and lemon pepper seasoning. Bring to boiling; add shimp. Return to boiling; reduce heat. 3. Simmer, uncovered, for 2 minutes. Stir in bok choy. Cook about 1 minute more or until shrimp turn opaque. Start to finish: 30 minutes Makes: 4 servings Nutrition Facts per serving: 159 calories 6 grams fat ( 1 gram sat fat) 132 mg chol 1642 mg sodium 6 grams carbs 1 gram fiber 21 grams protein My Twist: I cooked up everything just like they had in the recipe EXCEPT for the shrimp part. Then I keep the "stock part" in the frig till I want it. Take out what amount of frozen precooked shrimp I want to have in my serving. Put the soup in a bowl, add the frozen shrimp and microwave till hot. I also add a couple of drops of beano just to fight and gas producing properties in the Bok Choy. You could also add a slice of ginger into the stock part of this soup for a tad more flavor and then just pull it out when you go to eat it. Enjoy! *huggles* Felicia =)

I forgot to mention that this soup would be good made with any kind of meat. I would probably NOT try and cook the other meats in the soup though but add them already cooked to it. Enjoy! *huggles* Felicia =)

Dale and Joshua are not big shrimp eaters so I put chicken thigh meat in theirs and they inhaled it! There are other sites but they had good prices and good shipping ( not to mention fast it should be here tomorrow - I CANT WAIT ) I was also looking for Porcini Mushrooms at a good price ( dried ) but WOW they are so not cheap. I got them once at Costco and should have gone right back about bought them out cuz of course they have never had them back since *grrrrr*. Where you are you can probably get all those things pretty easily but up here people would think I lost my marbles if I went in asking for Grey Salt roflmaooo *sigh* *huggles* Felicia =)
