I so agree with you all. I LOVE Paula. Hubby and I used to love her food. I have tried to adapt some of it and have made some of it for him since. I don't like Sarah or Sandra. Last night I watched the semi home made holiday "sandra" and she did nothing. She actually had the nerve to take a beautiful prime riba nd rub a packaged italian seasoning on it and then role it in cracked pepper. She has got to be out of her mind. She is a fars (sp). So fake and I so was thinking the same thing last night with the whole alcohol thing. She adds so much of it. No wonder her guests never know it is "semi homemade" LOL....sorry had to do that one. But hey if you are really snockered I am sure anything would taste good. I am soooo jelous that you got to meet Paula. I would love to meet her. We are close to the city (NYC) so I think that I am going to try and gets tickets to see Rachels new show. Her talk show is just not the same but I love her. I would give anything to meet Paula though. My sister in law and I have talked about going to Savanah to do her cooking school but it is soooo expensive. One day maybe. I kinda like Giada though. I guess because my hubby is Italian so when it comes to making simple italian food I get a few things from her. Not one of my favorites though. She did an amazing pork loin with a fig sauce though that I am making for Christmas. I am so excited for that one. YUMO!!! Hubby hates foodnetwork. He says I can watch and he will eat what I learn. LOL Too funny that we all love that chanel and basically the same shows. YAY!!! Melissa

OMG you have no idea! I decided to check her site to see if she was going to be in the area and she is!! THANK YOU!!! Just have to figure out if I can swing going there. OF COURSE I CAN!!!! I am going to try and go tomorrow to see her signing. Hubby is working so it is the perfect excuse! I am gonig to call to make sure it is still going on. Just my luck I would drive the 40 min to see her and for some reason it was canceled. LOL Thank you for mentioning that or I never would have even thought to see when she was going to be close. Thank you thank you thank you. I just thought since you are not that far away maybe there was a chance she would be in this area soon. YAY!!!! Melissa

Eggplant parmesan is very easy to make. The prep can be time consuming, but if you make enough it freezes well. eggplant- peel skin in sections down the lown side of it then cut into 1/4 to 1/2 inch slices. Dredge the eggplant slice in seasoned flour, then and eggwash, and finally bread crumbs. If you add wheat germ to the bread crumbs, that will increase the proteins. Brown the slices in olive oil on both sides and set aside to drain on paper towels. In a cassarole pan, spread some spaghetti sauce. Add layers of eggplant, mozzerella cheese and some parmesan , and sauce. Finsh the last layer with sauce and the cheeses on top. Cook in a 350 oven for about 35-45 minutes. When the cheese is bubbly, it is done. Enjoy. Aime

you can also make "eggplant lasagna" using the eggplant the same way, and then layering it with mozz. and rigotta and sauce. since i can't eat the pasta, this wors well for me. you all are making me hungry... well, not really, just "head hungry". fondly, patricia
