Today's Recipe : Shrimp and...

Ok my husband will not eat seafood and does not like tomatoes and he ate this lol so I think that makes it good right!?! First the full recipe and then I will post how I made it just for myself =) Shrimp with Tomato & Garlic 1 1/2 pounds fresh or frozen large shrimp in shells 2 tablespoons finely chopped shallots 2 cloves garlic, minced 1 tablespoon olive oil 1 Roma tomato, seeded and chopped ( about 1/2 cup ) 2 tablespoons snipped fresh flat leaf parsley 1/2 teaspoon of salt 1/2 teaspoon of finely shredded lemon peel 1/4 teaspoon freshly ground black pepper Lemon Wedges ( optional ) 1. Thaw shrimp, if frozen. Peel and devein shrimp. If desired, leave tails intact. Rinse shrimp. pat dry with paper towels. Set shrimp aside. 2. In a large skillet cook shallots and garlic in hot oil over medium-high heat about 2 minutes or until tender. Add shrimp; cook 2 to 4 minutes until shrimp turn opaque. Stir in tomato, parsley, salt, lemon peel and pepper. If desired, garnish with lemon wedges. Nutrition Facts Per Serving: Makes 4 servings Start to Finish : 20 minutes 176 calories 6 grams fat ( 1 gram sat fat ) 194 mg chol 483 mg sodium 4 grams carbs 0 grams fiber 26 grams protein Ok now here is my twist on this: I did this as a 2 serving portion for just me. I used 8 shrimp ( precooked, thawed in cold water, patted dry), half a Roma tomato, 1 clove of garlic and 1 slice of a sweet white onion ( cuz I had it and I didn't have a shallot) chopped up and then used all the same herbs and spices to taste. I cooked the onion and garlic as I was told to do but I added the tomatoes at this stage so they would cook down and get soft and make more of a sauce instead of having little chunks of tomato in it. Then once this was cooked to tender I added all the spices and herbs ( I use dried cuz its almost impossible to get good fresh anything here in the winter including dried lemon peel) and also tossed in the precooked shrimp at this time. Lastly I added a pinch of red pepper ( a SMALL PINCH) and let it cook till basically the shrimp came up to temp. Then I just put half in a little Gladware container and I ate the other half ( 4 shrimp). WAS YUMMY!!! They have that from start to finish this recipe takes 20 mins. I think it took me around 5 if I don't count the 5 mins it took to thaw the shrimp. VERY SIMPLE!!! I am going to do one type of meat per week. So Sat and Sun with also be shrimp recipes and we will move on to something else starting Monday. Whats your vote for next weeks "meat". Chicken, Pork, Beef, Fish, or something else? I forgot to mention that this is an AWESOME recipe to "try for the first time" tomatoes if you haven't already. It cooks out most of the acid and is very mild. So if you haven't tried tomato sauce or tomatoes yet give this one a whirl. There is very little veggie in this so its a great one to start adding something new into your diet. And you say that you do not cook! BAH! If I could trick my hubby into eating shrimp I would try it but he sees it coming a mile away. This is a great recipe though. I might make it for me tomorrow! Melissa

Hey what can I say... I am motivated now lol. Only cuz I am having great fun posting this stuff on the board and so I have to actually try it before I can post it *grin*. What if you cut up the shrimp really small, maybe tossed in bit more tomato or even added a spoon full of tomato paste to kind of "hide" them? Men sheesh. lol Dale is always telling me " I don't like that" and he is usually wrong cuz once I cook it he eats it and asks for it again lol. I am a firm believer that no one HATES anything. They just hate the way it was cooked the time they tried it. Dale wouldn't eat Brussels sprouts, said he hated them. I cut them in half and "fried" them in a touch of butter and olive oil till the cut side was brown and crispy. Its now one of his favorite veggies. Dale wouldn't eat cauliflower, said he hated it. I made faux mashed potatoes with it using sour cream, gyruere(sp?) cheese, real bacon, green onions and a touch of half & half and now its his FAVORITE veggie. Oh he will also eat this now when I steam the florets and then put a bit of gyurere(sp?) cheese over it and put it under the broiler for a bit till brown. YUM! So again I say.. Its probably not the item you hate lol just the way it was cooked. *huggles* Felicia =0)

I know what you mean. He used to hate asparagus until I made it for him my way. I roast it in the oven with a littel olive oil some garlic and kosher salt and pepper. He LOVES it. And with brussel sprouts I did not like them and once decided to for some reason try roasting them the same way I do the asparagus and I love them now! Hubby will not even try them YET! It is funny that mention cauliflower. I have some waiting in the fridge for him with a cheese sauce for him to try. He is not veggie eater at all and especially since surgery he is not but he is being more open to it. The other night at his company party they have eggplant parm and he tried it and really liked it. Before that he would have sworn that he hated it. I have to try and make it for him at home now. My fav chanel is the food network and I love the show on bravo Top Chef. I get tons of ideas from them. I love to experiment. Some are good and some are not. Hubby loves that I love to cook though. He is little spoiled what can I say. He is very good to me thoguh so I can not complain one bit! I am going to go and post on here the recipe for chili that I got from here. Really east and great protein. Hugs, Melissa

I am a food Network JUNKIE! (ok and HGTV to ) When Joshua was tiny he would sit for hours watching Martha Stewart and Iron Chef. He is 6 now and we STILL watch Iron Chef together lol. I never miss a Rachel Ray 30 Minute Meals. I would almost never cook anything she cooks but I do get great tips off her show. Another FAVORITE is Alton Browns Good Eats. Oh he is so entertaining to watch and another great show for super tips lol. Actually sitting here watching Rachel Ray as I type lol. I LOVE LOVE LOVE Egg Plant. No matter how I have tried to cook it though Dale is a no go on it. But thats ok. You cant love everything lol. My son though, he eats like me. He will try anything once. His favorite foods in the whole world are tomatoes and cucumbers. I can put any type of junk food on the counter next to a things of tomatoes or cucumbers and he will go for the veggies every time. I am so proud that he will grow up with better eating habits than his Dad and I had. There really isn't a food I wont try. I may never eat it again but I will try it at least once lol. My favorite way to cook asparagus is on the grill till the tips are crunchy and the stalks are soft. Dip in a touch of mayo and ahhhhhh heaven. My favorite way to cook Brussels Sprouts is actually to steam them till soft and pour Balsamic Vinegar over them. MMMMMMM. I do NOT like raw cauliflower at all lol but actually will eat it steamed plain *shrug* go figure lol. Another one I wasn't fond of was Turnips. Every way I had had them they just didn't do it for me. Then one day I peeled them, sliced them thin and deep fried them (using coconut oil). OMG YUM! They do not get crisp like chips but they get so sweet. YUM. Dale is totally spoiled also. But I don't mind. He works super hard for us and never complains about anything. He is so easy going. He will always eat anything I make and usually if he doesn't like it he just says "not a keeper" lolol. I just LOVE Kosher salt. If I had one mission in culinary life is to switch people OFF table salt and onto kosher salt. Table salt will never be allowed in my house ever again lol. Oh tip for kosher salt. If you want to use it in a shaker... put it in a coffee grinder and give it a wiz! lol Geez look at me rattle on lol. *huggles* Felicia =)

For my first week after surgery I stayed at my parents. I relaxed in their recliner and...watched the food network..NON STOP. My mom didn't understand how a person who just had my type of surgery would want to sit and think about food. I explained, I didn't want to eat it...I wanted to COOK it! Some of those folks are so dang entertaining too. I LOVE LOVE LOVE Paula Deen, her Sat. night show is so fun. I should also mention, I stood in line for 3 hours last night, just to meet her. I love to watch her show - but I would never cook her food. I certainly can't eat it. 1st two ingredients for one of her dishes usually would be "1 stick butter, 1 cup sugar" ha.

Its always on at my house. ( back ground noise lol ) . I LOVE PAULA!! I want to be adopted by her. I would never fix anything she makes either but oh man shes like a dream "mom" lol. Her daughter in laws must be in heaven lol. Ok and her boys are not bad to look at either. Although I don't really like their new show as much as I like Paula's. I wish they had just done a regular cooking show instead. Some people talk politics we talk food network roflmaooooo If asked I would want to meet : Alton Brown , Paula Dean and Rachel Ray. I used to be a huge fan of Emeril but his show doesn't really do it for me anymore. That and I don't like 90% of the things he cooks lol. I like Tyler Florence ( what a cutie ) but again not someone I would watch for recipes. The only food network show I HATE is Sarah whats her face. OMG I hate that show. Have you seen the show "Take Home Chef" I think its on TLC? *huggles* Felicia =) Butter I could take but the sugar would be a killer lololol

Is Sarah the "semi homemade" chick? I can't STAND her! The first time I saw her he was going to make a "cheese cake" and I got excited until...she bought a store bought cheese cake, scooped out the filling and threw out the crust. She added a few other things and called it done. How disspointing. I'm not that big a fan of Giada (sp?) either. Ina Garten is probably one of my favorites as well, so sophistacated and New Englandish (is that a word?). Paula is exactly the same in person as she is on TV. Her husband was with her. The boys were here in the Philly area too, doing a gig of their own (I assume taping a new episode of the show?)...but they didn't come out to the 'burbs to join momma for the book signing Rachel Ray is my favorite - the boyfriend thinks I am already starting to look like her (figure wise)...I know I have quite a ways to go to get to looking THAT good though. I would love to meet her some day. Alton Brown is ok...too much science for me...I don't want to think too much while I'm cooking. LOL. And Tyler Florence (Meeeeyowwww!) I like his Brick Chicken at Applebees...well, I did pre-op, haven't been brave enough to try it since.

Sandy is that semi homemade chick isn't it? I don't like that show much either. Man shes a lush lol. Every meal has to be followed with buckets of booze!! Probably cuz she uses all that salty prepackaged seasonings lmaoooooo And who the heck has room to store all those table decoration set ups????? No the one I am thinking of is Sarah Molten? I cant think of the name of the show though. Will have to look it up lol. Ina Garten is like the Martha Stewart of Food Network. Way to classy (fancy) for the average Jane but I love to watch her show just to drool over her house and gardens lmaoo Giada is a time filler show lol. I usually have her on but in the background just making noise lolol. I want to try that Brick Chicken also at AppleBees but hubby doesn't want to eat the left overs and would rather have a steak lmaooo so I cant bring myself to pay for it even if I could keep eating on the left overs lol *huggles* Felicia =)
