It's the weekend - so why not try a few different things. we have a shrimp, and a bean/meet dish...so here's one for chicken. I used boneless skinnless thighs. 4 thighs 1 clove garlic minced sliced onion (I used 1/4) 1 can fat free cream of mushroom soup kosher salt pepper grill seasoning 1 can cut green beans hot sauce to taste Parm. cheese (to taste) Season thighs to taste (I used salt, pepper and grill seasoning) Place approx 1 inch water in skillet on high heat. Set chicken in pan and simmer, turning occasionally until water is evaoprated. Add a small amount more of water to "deglaze" the pan. Remove chicken pieces (they will be cooked on outside - but most likely not cooked "through" yet) Add onions and garlic to juice in pan and coo****il soft. Add soup, mix in about 1/4 can more of water. Heat to bubbling Add chicken back to pan Reduce heat and cover. Simmer until chicken is cooked through (you may need to adjus****er amounts). Be sure to chec****asionaly and coat chicken pieces with sauce, and turn from time to time. About 5 min. before serving remove lid to allow sauce to thicken, add can of green beans and stir through to heat. Before serving sprinkle with parm cheese. For the none WLS people in your life you can cook up some rice and pour this over it. I enjoy it just with the chicken - it's very moist and you can shred it up with your fork.
