I can eat easily: Beef, Pork, White Fleshed Fish, Chicken ( know the odd one out of the group here but it is really my friend, Hubby still has a tough time at 6mnths) I can eat but not as easily : Eggs (sit hard in the pouch), Had kielbasa in soup ( was ok) I can not eat : Tuna (NOT a good choice at all, really, really bad choice ) I have not tried yet : Crab, Muscles, Shrimp, tofu, sausage I love the recipe thing I love to cook and I think that sometimes we get in a rut with what is safe and this might help some of us realize we should and can try new things. Just like Forest says "ya never know what your gonna get" Hugs, Melissa

I am not a huge fan of cooking but I do like the process of finding recipes and implementing them ( if that makes sense lol ). I LOVE cook books though because I do NOT have an imagination when it comes to cooking. I can not plan a meal on my own etc... But I found if I could find some good recipe books that followed an eating plan I was on that they did all the work for me lol. Most of these recipes for a while will be coming out of Better Homes and Gardens Phase 1 Low Carb Cooking and Better Homes and Gardens Phase 2 Low Carb Cooking I LOVE THESE BOOKS! The recipes are SO simple. Using ingredients I can almost always get at the local super market. *huggles* Felicia =)

I must be the odd one out.... I can eat - well everything I've tried....shrimp (my fav.), chicken (dark thigh meat sits the best), beef (tender - even had a sliver of prime rib at the office holiday party), ham, turkey, eggs etc. -all meats that I prepare are poached w/ water to infuse extra moisture and served with some sort of low fat sauce or gravy.....it's it's moist and has a "lubricant" - I can shred it with my fork and down it goes no problem. Have not tried: fish (never really liked it anyway except for tilapia and halibut), steak (that seems ambitious to me), tuna (you have all scared me...I don't WANT to try it). The ony time I ever had problems was with canned white meat chicken - even in chicken salad it seemed to dry and I felt like I was choking on it.

I am not a huge fish eater either. I like Tilapia cuz its mild and takes to sauces really well. Actually most white fish are like that. I am not a fan of salmon at all. Well unless its covered in cucumber dill sauce and then its only a device to eat the sauce with lmaooo. I cant eat canned meats. My brain wont allow it lol. I try really I do but its usually so dry and tough. Man would it make it so much cheaper then fresh meat lol. *huggles* Felicia =0)

So far, I can handle everything I've tried. I'm looking forward to your recipes, especially the tofu ones. I've never tried it because I've heard it's nasty, but I'll try one of your recipes for it!! ~Blessings~ Halona

I LOVE tofu!! Especially "fried" with a Parmesan crust. Ok its not really "fried" but it tastes like it. My husband would NOT TRY tofu at all till I made "fake fries" out of it one day lol. I just take the firm tofu and press it till I have as much of the water out of it as I can get. Then I cut it into "fries" and dip it once in soy sauce and then bread it with Parmesan cheese then into a sautee pan that has a touch of olive oil ( and I use butter but you don't have to use it ). You leave it to cook for what seems like for ever till it is really brown and crispy. Flip it to each side and repeat the cooking. You get this light "crunchy type crust" on the outside and this soft center with TONS of flavor. Its really the best way in my opinion to "walk into " eating tofu lol. OH OH OH you can also take the soft tofu and put it in your smoothies and shakes. There really is no flavor so its just PACKED with good for you protein and it makes things creamy. I also use soy flour for "breading" things as its a TON lower in carbs and so good for you. One small bit of advice on soy flour. Keep it in the frig and DO NOT TASTE IT RAW! OMG I can still taste it from years ago when I tried it raw. ACK EW! But once cooked there is basically NO flavor at all. *huggles* Felicia =0)

What kind of meat can I eat? What day is it? So far, I have eaten canned and fresh tuna, smoked salmon, shrimp, chicken, and turkey. I had no luck at all with the fresh tuna Disappointing, as I really like it. Everything else, I have both done well with and become quite sick on at least once each! Lisa
