What's For Dinner? Recipe(s)

Since we are all searching for things to eat that are new and fre****hought I would post recipes as I tried them ( and that I thought were good lol of course ). Then I thought if you had a yummy must try you could just add it to the post. I tend to cook low carb so you can always just adjust most of the recipes to lower the fat etc as you see fit. Ok this is what I am having for lunch/dinner: Please note that I made this recipe by reducing it down to 1 serving and then just cooked it that way so I wasn't cooking a TON of food for just me lol. ------------------------- Garlic & Herb Shrimp Saute (If you cant do shrimp yet this one is good with fish) 1 pound fresh or frozen large shrimp in shells ( I used frozen and already cooked shrimp ) 2 tablespoons of olive oil 4 cloves of garlic 1/3 cup thinly sliced leek or green onion ( I used white onion cuz I had it ) 1/2 teaspoon dried basil, oregano or tarragon, crushed 2 tablespoons dry sherry or dry white wine 1 tablespoon lemon juice 1/4 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon snipped fresh parsley ( I left this off cuz I didn't have it) 1. Thaw shrimp, if frozen. Peel and deveined shrimp, leaving tails intact. Rinse shrimp: pat dry. Set aside. 2. In a large skillet heat oil over medium heat. Add shrimp, garlic, leek, and basil. Cook and stir for 2 to 4 minutes or until shrimp are opaque. Carefully add wine, lemon juice, salt and pepper to skillet. Cook and stir just until heated through. Stir in parsley. Ok here is the twist I did. Since I used pre cooked shrimp I just thawed it in cold water, then follow the recipe but since they are already cooked I just cooked the leek, basil and garlic for a quick min then added the shrimp so they wouldn't be tough. Then just follow the rest of the recipe. Nutrition Facts Per Serving: 201 calories 9 grams fat ( only 1 gram sat fat) 172 mg chol 316 mg sodium 4 g carbs 0 g fiber 23 g protein ------------------------------ Enjoy!! *huggles* Felicia

Oh my goodness!!!! This sounds great!!! I can't think of any recipes right now. I've been eating pretty boring (plain chicken breast, etc) because I just don't want to eat still so don't feel the need to experiment. But maybe once I try this Shrimp Saute I may find my appetite!!! ~Halona~

I added a pinch of red pepper flake to it also. WAS YUM!! I do find that when I eat shrimp if I just from the very start cut it up into tiny pieces I never have a heavy feeling with it. BUT if I try and "trust" myself with small bites taken out of a piece lol well I always get that heavy feeling. I never feel like eating either. But since we must I thought if I start trying to find new things to eat maybe I would become inspired lol. Well at least it wouldn't be boring *grin*. Enjoy!! *huggles* Felicia =)

Thats awesome news!!! If we lived closer I would gladly pay you to cook for me *grin*. Every time a holiday comes up Dale ( hubby ) always askes what I want and I always say someone to cook for us lol. I don't mind cleaning the house but I hate dishes and cooking ( actually just the getting it all together and the cleaning it all up parts lol). Ok so I don't HATE it but its not my favorite part of the day lol. I do like buy stuff for cooking though. Like yesterday I just found this awesome sight all about Salt and ordered some Grey Salt. I LOVE this salt its so good on everything. I am going to try and order every couple of months a new fancy salt. I cant eat table salt ( I have trouble with sodium) so am always using kosher and I have found that salts have so many different flavors. Who knew? LOL Ok so I am off on a tangent here but I do like to buy fancy stuff to cook and eat. Right now I am trying to find porcini mushrooms. I wish I could have them fresh but going to have to settle for dried as who can afford them fresh lol. Anyways lmaoo sorry went off the road there but I am so happy for you with the new aspect of your job!! CONGRATS!! *huggles* Felicia =0)
